Prep: 10 Cook: 35<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz carrots<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS apricot jam<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz ground beef<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">scallions <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lemon<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">oz chicken stock concentrates<\/span><\/li>\n<li><span class=\"quantity\">2\u00bd<\/span><span class=\"ingredient-name\">oz Israeli couscous<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup panko breadcrumbs<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS <span style=\"color: #ff0000;\"><strong>Tunisian spice blend<\/strong><\/span> (See below)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">kosher salt<\/span><\/li>\n<li><span class=\"id-ingredient-name\">black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS cooking oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter <\/span><\/li>\n<\/ul>\n<p><strong>Prep &amp; mix glaze:<\/strong><\/p>\n<p>Adjust rack to top position and preheat oven to 425\u00b0F.<\/p>\n<p>Wash and dry produce.<\/p>\n<p>Trim, peel, and cut <strong>carrots<\/strong> on a diagonal into \u00bd-inch-thick pieces.<\/p>\n<p>Trim and thinly slice <strong>scallions<\/strong>, separating <strong>whites<\/strong> from <strong>greens<\/strong>, mince <strong>whites<\/strong>.<\/p>\n<p>Zest and quarter <strong>lemon<\/strong>.<\/p>\n<p>In a small bowl, combine <strong>jam<\/strong>, half the <strong>stock concentrates<\/strong> (you\u2019ll use the rest later), and \u00bc cup <strong>water<\/strong>.<\/p>\n<p><strong>Roast carrots:<\/strong><\/p>\n<p>Toss <strong>carrots<\/strong> on a baking sheet with a large drizzle of <strong>oil<\/strong>, <strong>salt<\/strong>, and <strong>pepper<\/strong>. Roast on top rack, flipping halfway through, until browned and tender, 20-25 minutes.<\/p>\n<p><strong>Cook couscous:<\/strong><\/p>\n<p>Meanwhile, melt 1 TBS <strong>butter<\/strong> in a small pot over medium-high heat. Add <strong>couscous<\/strong> and cook, stirring, until lightly toasted, 2-3 minutes. Stir in \u00be cup <strong>water<\/strong> and remaining <strong>stock concentrates<\/strong>. Bring to a boil, then cover and reduce heat to low. Cook until tender, 6-8 minutes. Keep covered off heat until ready to serve.<\/p>\n<p><strong>Mix &amp; form meatballs:<\/strong><\/p>\n<p>While <strong>couscous<\/strong> cooks, in a large bowl, combine <strong>beef<\/strong>, <strong>scallion whites<\/strong>, <strong>panko<\/strong>, <span style=\"color: #ff0000;\"><strong>Tunisian Spice<\/strong><\/span>, and \u00be tsp <strong>salt<\/strong>. Season with <strong>pepper<\/strong>. Form into 10-12 1\u00bd-inch <strong>meatballs<\/strong><\/p>\n<p><strong>Cook &amp; glaze meatballs:<\/strong><\/p>\n<p>Heat a drizzle of <strong>oil<\/strong> in a large pan over medium-high heat. Add <strong>meatballs<\/strong> and cook, turning occasionally, until browned all over, 4-6 minutes.<\/p>\n<p><strong>Tip: <\/strong>If there\u2019s excess grease in your pan, carefully pour it out.<\/p>\n<p>Pour in <strong>jam mixture<\/strong> and bring to a simmer, then reduce heat to medium. Cover and cook until <strong>meatballs<\/strong> are cooked through and glazed, 5 minutes more. Season with <strong>salt<\/strong> and <strong>pepper<\/strong>. Divide <strong>couscous<\/strong>, <strong>carrots<\/strong>, and <strong>meatballs<\/strong> between plates. Top <strong>meatballs<\/strong> with remaining <strong>glaze<\/strong> from pan and remaining <strong>scallion greens<\/strong>.
