I modified it and now it is real fine. Skip the dark soy sauce if you want a lighter colored dish like shown above.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz zucchini, chopped<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz bell peppers, chopped<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb dark meat chicken, bite sized pieces<\/span><\/li>\n<li><span class=\"quantity\">4-8<\/span><span class=\"ingredient-name\">dried whole <strong><span style=\"color: #ff0000;\">red peppers<\/span><\/strong><\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">green onions, chopped, whites and green separated<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp ginger, minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS soy sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS dark soy sauce (optional)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Chinkiang black vinegar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Shaoxing cooking wine<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp sugar<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS corn starch mixed in 1 TBS water<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup peanuts or celery, diced (if you can&#8217;t have peanuts)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp sesame oil<\/span><\/li>\n<\/ul>\n<p>Chop the <strong>vegetables<\/strong> to 1-inch pieces. Blanch and set aside.<\/p>\n<p class=\"Body\">Heat a tsp of <strong>oil<\/strong> in a wok over medium heat and add a cup of <strong>raw shelled peanuts<\/strong>. Stir constantly (or they\u2019ll burn) for 3 minutes. Turn off the heat and stir for another minute using the residual heat in the wok. Set aside to cool. They will turn crunchy once they\u2019re cooled completely.<\/p>\n<p>Fry <strong>chicken<\/strong>. Drain and set aside.<\/p>\n<p><strong>Premix sauce: <\/strong>In a small di<strong>sh, <\/strong>mix <strong>soy sauce, dark soy sauce (optional), <span class=\"ingredient-name\">Chinkiang black vinegar<\/span>, Shaoxing cooking wine, sugar, water<\/strong>. Mix and set aside.<\/p>\n<p><strong>Slurry:<\/strong> Mix 1 TBS corn starch in 1 TBS water. Mix and set aside.<\/p>\n<p>Add 1 TBS <strong>oil<\/strong> to a hot wok, and add the <span style=\"color: #ff0000;\"><strong>dried red peppers<\/strong><\/span>. Stir for ten seconds. Add the <strong>ginger,\u00a0<\/strong> <strong>garlic, <\/strong><strong>green onion whites<\/strong>, stir. If using <strong>celery<\/strong>, add.
