Wash and dry produce.<\/p>\n<p>Trim and thinly slice <strong>mushrooms<\/strong> (skip if your <strong>mushrooms<\/strong> are pre-sliced!). Trim and thinly slice <strong>scallions<\/strong>, separating <strong>whites<\/strong> from <strong>greens<\/strong>. Peel and mince or grate <strong>garlic<\/strong>.<\/p>\n<p>Cut <strong>chicken<\/strong> into bite sized pieces.<\/p>\n<p><strong>Cook pasta: <\/strong><\/p>\n<p>Once <strong>water<\/strong> is boiling, add <strong>cavatappi<\/strong> to pot. Cook until al dente, 9-11 minutes.<\/p>\n<p>Reserve \u00bd cup <strong>pasta cooking water<\/strong>, then drain.<\/p>\n<p><strong>Cook mushrooms: <\/strong><\/p>\n<p>Meanwhile, heat a drizzle of <strong>olive oil<\/strong> and 1 TBS <strong>butter<\/strong> in a large pan over medium-high heat. Add <strong>mushrooms<\/strong>, cook, stirring occasionally, until browned and softened, 2- to 3-minutes.<\/p>\n<p>Push <strong>mushrooms<\/strong> to one side of pan, add another drizzle of <strong>olive oil<\/strong> to empty side.<\/p>\n<p><strong>Cook chicken: <\/strong><\/p>\n<p>While <strong>mushrooms<\/strong> cook, pat chicken dry with paper towels and season all over with Italian Seasoning, salt, and pepper.<\/p>\n<p>Once <strong>mushrooms<\/strong> are browned and softened, add <strong>chicken<\/strong> to empty side of pan, cook, stirring occasionally, until <strong>chicken<\/strong> is browned and cooked through, 4- to 6-minutes.<\/p>\n<p>Stir in <strong>scallion whites<\/strong> and <strong>garlic,<\/strong> cook until fragrant, 1 minute.<\/p>\n<p><strong>Make sauce: <\/strong><\/p>\n<p>Add <strong>cream sauce base<\/strong> and <strong>stock concentrate<\/strong> to pan. Stir to combine.<\/p>\n<p>Bring to a simmer, then reduce heat to low.
