It makes a nice, simple family meal. Either the broccoli or the sun-dried tomato can be eliminated or increased as desired. (hint: double the tomatoes)<\/p>\n<p>Use your imagination on the type of pasta and protein, shrimp, pork, beef. Just about anything will work.<\/p>\n<p><strong>Chicken:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS oil <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb boneless chicken breasts<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp Italian seasoning<\/span><\/li>\n<\/ul>\n<p><strong>Pasta:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz Rotini, Penne, etc.<\/span><\/li>\n<\/ul>\n<p><strong>Vegetables:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz broccoli, small florets<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup sun-dried tomatoes oil reserved, sliced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS oil from sun-dried tomatoes<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS pine nuts, toasted (Optional)<\/span><\/li>\n<\/ul>\n<p><strong>Cream sauce: <\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup heavy cream<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried basil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<\/ul>\n<p><strong>For serving:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup Parmesan cheese shredded<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">oz Italian flat leaf parsley, chopped fine<\/span><\/li>\n<\/ul>\n<p><strong>Broccoli and pasta:<\/strong><\/p>\n<p>Bring one gallon of <strong>water<\/strong> to boil in a large pot. Add 1 TBS <strong>salt<\/strong> and <strong>broccoli.<\/strong> Cook for until starting to soften (about 2 minutes), remove to a bowl of ice water with a spider.<\/p>\n<p>Return <strong>water<\/strong> to a boil and add pasta<strong>.<\/strong> Cook until just al dente, a minute or two less than manufacturer&#8217;s directions. Reserve a cup of the <strong>starchy water,<\/strong> then drain and set <strong>pasta<\/strong> aside.<\/p>\n<p><strong>Chicken breasts:<\/strong><\/p>\n<p>While the <strong>pasta<\/strong> is cooking, season <strong>chicken<\/strong> with <strong>salt<\/strong> and <strong>pepper<\/strong> and a good sprinkle of <strong>Italian seasoning.<\/strong><\/p>\n<p>Heat <strong>oil<\/strong> until hot in large saut\u00e9 pan. Add <strong>chicken breasts<\/strong> and brown on both sides for 2-3 minutes until nicely browned. Remove <strong>chicken<\/strong> from pan and set aside. Wipe out and set pan aside, it will be used later. Slice each <strong>chicken breast<\/strong> on an angle in 3 \u2013 6 slices. <strong>Chicken<\/strong> will finish cooking later.<\/p>\n<p><strong>Assembly:<\/strong><\/p>\n<p>Return\u00a0pasta pot to heat, add <strong>cream,<\/strong> and bring to a boil. Reduce heat to medium and simmer 2 to 3 minutes until reduced and thickened slightly.<\/p>\n<p>Add <strong>tomatoes<\/strong> and <strong>basil,<\/strong> stir. Return sliced <strong>chicken breasts<\/strong> to pan and simmer until cooked through 2 to 3 minutes.<\/p>\n<p>Return <strong>pasta<\/strong> to pot. Add <strong>toasted pine nuts,<\/strong> is using. Mix.
