Preheat oven to 400\u00b0F. Cut <strong>potatoes<\/strong> into 1-inch cubes. Put in a medium pot with enough water to cover by an inch and a large pinch of <strong>salt.<\/strong> Bring to a boil and cook until pierced easily with a knife, about 15 minutes (keep an eye on time\u2014 you\u2019ll be adding <strong>carrots<\/strong> to the pot after 10 minutes).<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-52245\" src=\"https:\/\/i0.wp.com\/nowellfamily.org\/cookbook\/wp-content\/uploads\/sites\/4\/2023\/08\/ParmesanCrustedCodPrep.jpg?resize=254%2C153\" alt=\"\" width=\"254\" height=\"153\" \/><\/p>\n<p><strong>Prep: <\/strong><\/p>\n<p>Meanwhile, mince or grate <strong>garlic.<\/strong> Peel <strong>carrot<\/strong> and cut into 2-inch-long pieces. Quarter each piece lengthwise to create <strong>sticks.<\/strong> Zest <strong>lemon,<\/strong> then cut into <strong>wedges.<\/strong> Pick <strong>parsley<\/strong> leaves from stems and roughly chop.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-52243\" src=\"https:\/\/i0.wp.com\/nowellfamily.org\/cookbook\/wp-content\/uploads\/sites\/4\/2023\/08\/ParmesanCrustedCodPanko.jpg?resize=254%2C153\" alt=\"\" width=\"254\" height=\"153\" \/><\/p>\n<p><strong>Make panko crust: <\/strong><\/p>\n<p>Combine <strong>Parmesan, oregano, lemon zest, panko,<\/strong> half the <strong>garlic,<\/strong> and a drizzle of <strong>olive oil<\/strong> in a small bowl. Season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-52242\" src=\"https:\/\/i0.wp.com\/nowellfamily.org\/cookbook\/wp-content\/uploads\/sites\/4\/2023\/08\/ParmesanCrustedCodBake.jpg?resize=253%2C151\" alt=\"\" width=\"253\" height=\"151\" \/><\/p>\n<p><strong>Bake cod: <\/strong><\/p>\n<p>Pat <strong>cod<\/strong> dry with a paper towel. Place on a lightly <strong>oiled<\/strong> baking sheet. Brush each <strong>fillet<\/strong> with a drizzle of <strong>olive oil.<\/strong> Season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Put a thick layer of <strong>panko crust<\/strong> on top of each, pressing to adhere. Bake in oven until <strong>cod<\/strong> flakes when poked with a fork, 10-12 minutes.<\/p>\n<p><strong>Tip: <\/strong>For an extra-crispy crust, heat broiler and broil baked fillets for an additional minute.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-52241\" src=\"https:\/\/i0.wp.com\/nowellfamily.org\/cookbook\/wp-content\/uploads\/sites\/4\/2023\/08\/ParmesanCrustedCodCarrots.jpg?resize=252%2C151\" alt=\"\" width=\"252\" height=\"151\" \/><\/p>\n<p><strong>Finish carrots and potatoes: <\/strong><\/p>\n<p>After <strong>potatoes<\/strong> have boiled for about 10 minutes, add <strong>carrots<\/strong> to pot. Boil until just tender, 5- to 6-minutes. Drain. Return <strong>carrots<\/strong> and <strong>potatoes<\/strong> to pot.
