The also go for a roast in it, soaking in all that vinegar-kissed flavor as they cook in the oven.<br \/>\nPrep: 10 Cook: 30<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz Yukon gold potatoes<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz baby carrots<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tbs herbs de Provence<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">yellow onion<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz grape tomatoes<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz chicken breasts<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tbs balsamic vinegar<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp honey<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tbs olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tbs butter<\/span><\/li>\n<\/ul>\n<p><strong>Roast veggies:<\/strong><\/p>\n<p>Wash and dry all produce. Preheat oven to 400\u00b0F. Cut <strong>potatoes<\/strong> into \u00bd-inch cubes. On a baking sheet, toss <strong>potatoes, carrots,<\/strong> <strong>Herbs de Provence<\/strong>, a drizzle of <strong>olive oil<\/strong>, and a pinch of <strong>salt<\/strong> and <strong>pepper.<\/strong> Roast in oven until lightly browned, 25-30 minutes, tossing halfway through.<\/p>\n<p><strong>Prep:<\/strong><\/p>\n<p>Peel, halve, and thinly slice the <strong>onion.<\/strong> Mince or grate <strong>garlic.<\/strong> Halve <strong>grape tomatoes<\/strong> lengthwise.<\/p>\n<p><strong>Sear chicken:<\/strong><\/p>\n<p>Heat a drizzle of <strong>olive oil<\/strong> in a large pan over medium-high heat. Season <strong>chicken breasts<\/strong> all over with <strong>salt<\/strong> and <strong>pepper.<\/strong> Sear in pan until browned and almost cooked through, 3-4 minutes per side. Remove from pan and set aside on a second baking sheet (or in a baking dish).<\/p>\n<p><strong>Make glaze:<\/strong><\/p>\n<p>Add <strong>onion<\/strong> and a drizzle of <strong>olive oil<\/strong> to same pan over medium-low heat. Cook until softened, about 5 minutes. Toss in <strong>garlic, tomatoes, balsamic vinegar,<\/strong> and <strong>honey.<\/strong> Cook until <strong>vinegar<\/strong> and any <strong>juices<\/strong> are slightly thick, about 2 minutes.
