{"id":52482,"date":"2023-09-18T00:19:37","date_gmt":"2023-09-18T00:19:37","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=52482"},"modified":"2026-04-27T20:39:47","modified_gmt":"2026-04-27T20:39:47","slug":"marsala-mushroom-chicken-skillet","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2023\/09\/18\/marsala-mushroom-chicken-skillet\/","title":{"rendered":"Marsala Mushroom Chicken Skillet"},"content":{"rendered":"<h3 style=\"text-align: center;\">with Broccoli and Peas<\/h3>\n<h4 style=\"text-align: center;\">Yield: 2 Servings<\/h4>\n<p>Chicken &amp; mushrooms with a creamy Marsala sauce mixed with broccoli and peas served with pasta.<\/p>\n<p>Needed more sauce, so all of the sauce ingredients below are now doubled.<\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz noodles<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz cremini mushrooms<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">shallot<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz broccoli florets<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz boneless skinless chicken breasts<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS flour<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz dry Marsala wine<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz light cream<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp chicken Better than Bouillon <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">oz peas<\/span><\/li>\n<li><span class=\"id-ingredient-name\">olive oil <\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper <\/span><\/li>\n<\/ul>\n<p><strong>Prepare the Ingredients:<\/strong><\/p>\n<p>Cut <strong>mushrooms<\/strong> into \u00bc-inch slices.<\/p>\n<p>Peel and halve <strong>shallot.<\/strong> Slice thinly.<\/p>\n<p>Cut <strong>broccoli florets<\/strong> into bite-sized pieces.<\/p>\n<p>Pat <strong>chicken breasts<\/strong> dry and, on a separate cutting board, cut into 1&#8243; dice. Season with \u00bc tsp <strong>salt<\/strong> and \u00bc tsp <strong>pepper.<\/strong> Place <strong>diced chicken<\/strong> and <strong>flour<\/strong> in a mixing bowl and toss to coat.<\/p>\n<p><strong>Noodles:<\/strong><\/p>\n<p>Bring a gallon of water to a boil. Add 1 TBS salt, stir and add noodles. Cook as directed on box.<\/p>\n<p><strong>Sear the Chicken:<\/strong><\/p>\n<p>Place a medium non-stick pan over medium-high heat and add a drizzle of <strong>olive oil.<\/strong> Add <strong>chicken<\/strong> to hot pan and stir occasionally until seared on two sides, 3-4 minutes. Transfer to a plate. <strong>Chicken<\/strong> will finish cooking in a later step. Keep pan over medium-high heat.<\/p>\n<p><strong>Cook the Vegetables<\/strong><\/p>\n<p>Add 2 tsp <strong>olive oil, mushrooms,<\/strong> and <strong>shallot<\/strong> to hot pan and stir occasionally until lightly browned, 2-4 minutes.<\/p>\n<p>Add <strong>Marsala<\/strong> and stir occasionally until mostly evaporated, 2-3 minutes.<\/p>\n<p>Stir in <strong>cream, broccoli,<\/strong> 2 oz <strong>water, demi-glace,<\/strong> \u00bc tsp <strong>salt,<\/strong> and a pinch of <strong>pepper<\/strong> until combined.<\/p>\n<p><strong>Finish the Skillet<\/strong><\/p>\n<p>Return <strong>chicken<\/strong> and any accumulated <strong>juices<\/strong> to pan. Bring to a simmer. Once simmering, stir occasionally until <strong>sauce<\/strong> is thick enough to coat the back of a spoon and <strong>chicken<\/strong> reaches a minimum internal temperature of 165\u00b0F, 6-7 minutes.<\/p>\n<p>Add <strong>peas<\/strong> and stir until warmed through, 1 minute.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-52483\" src=\"https:\/\/i0.wp.com\/nowellfamily.org\/cookbook\/wp-content\/uploads\/sites\/4\/2023\/09\/MarsalaMushroomChickenServe.jpg?resize=150%2C150\" alt=\"\" width=\"150\" height=\"150\" \/><\/p>\n<p><strong>Serve:<\/strong><\/p>\n<p>You can mix the <strong>pasta<\/strong> into the skillet and get it all coated or serve over the pasta.
