Stem <strong><span style=\"color: #ff0000;\">poblano pepper<\/span>,<\/strong> seed, and cut into \u00bd&#8221; dice. Wash hands and cutting board after prepping. Quarter <strong>lime.<\/strong> Pat <strong>diced chicken<\/strong> dry, and season with a pinch of <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-52511\" src=\"https:\/\/i0.wp.com\/nowellfamily.org\/cookbook\/wp-content\/uploads\/sites\/4\/2023\/09\/CreamyChickenChowderSear.jpg?resize=150%2C150\" alt=\"\" width=\"150\" height=\"150\" \/><\/p>\n<p><strong>Sear the chicken:<\/strong><\/p>\n<p>Place a medium pot over medium-high heat and add 1 tsp <strong>olive oil.<\/strong> Add <strong>chicken<\/strong> to hot pot and stir occasionally until browned on two sides, 4-6 minutes. Transfer to a plate. <strong>Chicken<\/strong> will finish cooking in a later step. Reserve pot, no need to wipe clean.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-52510\" src=\"https:\/\/i0.wp.com\/nowellfamily.org\/cookbook\/wp-content\/uploads\/sites\/4\/2023\/09\/CreamyChickenChowderStart.jpg?resize=150%2C150\" alt=\"\" width=\"150\" height=\"150\" \/><\/p>\n<p><strong>Start the chowder:<\/strong><\/p>\n<p>Return pot used to sear <strong>chicken<\/strong> to medium heat and add 2 tsp <strong>olive oil.<\/strong> Add <strong>onion<\/strong> and <span style=\"color: #ff0000;\"><strong>poblano<\/strong><\/span> (reduce quantity if spice-averse) to hot pot and stir often until <strong>vegetables<\/strong> are slightly softened, 3-5 minutes. Stir in <strong>corn<\/strong> and <span style=\"color: #ff0000;\"><strong>seasoning rub<\/strong><\/span> until combined.<\/p>\n<p><strong>Options:<\/strong><\/p>\n<p>If using <strong>bacon, sausage<\/strong> or <strong>shrimp,<\/strong> line a plate with a paper towel. Place a medium non-stick pan over medium heat and add <strong>bacon, sausage slices<\/strong> or <strong>shrimp<\/strong> to hot pan. Flip occasionally until cooked, 6-8 minutes (3-4 for shrimp). Transfer to towel-lined plate. When cool enough to handle <strong>bacon,<\/strong> crumble.<\/p>\n<p>Stir half of the <strong>options<\/strong> into finished <strong>chowder<\/strong> and reserve the other half for garnish.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-52509\" src=\"https:\/\/i0.wp.com\/nowellfamily.org\/cookbook\/wp-content\/uploads\/sites\/4\/2023\/09\/CreamyChickenChowderFinish.jpg?resize=150%2C150\" alt=\"\" width=\"150\" height=\"150\" \/><\/p>\n<p><strong>Finish the chowder:<\/strong><\/p>\n<p>Add <strong>chicken<\/strong> and any <strong>accumulated juices,<\/strong> \u00bd cup <strong>water, cream,<\/strong> and <strong>chicken base<\/strong> to pot. Stir to combine and bring to a simmer. Once simmering, stir occasionally until slightly thickened and <strong>chicken<\/strong> reaches a minimum internal temperature of 165\u00b0F, 5-7 minutes. For a thinner texture, stir in additional <strong>water<\/strong> 1 TBS at a time until desired texture is reached. Remove from burner.
