It also makes a nice, simple family meal.<br \/>\nUpdated to describe the version served at 28-Sep-23 Community Group.<br \/>\nYou can use your imagination on this and replace the chicken with shrimp, sausage or beef. Also any pasta and vegetables can be used. Just be sure to barely cook it to al dente so it doesn\u2019t get too soft in the assembly.<\/p>\n<p><strong>Chicken:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS cooking oil, divided <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb chicken breasts, boneless skinless<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; freshly ground pepper<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">tsp Italian seasoning<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz Rotini, Penne, etc.<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz broccoli, small florets<\/span><\/li>\n<\/ul>\n<p><strong>Assembly: <\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup julienned sun-dried tomatoes, oil reserved<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS oil from sun-dried tomatoes<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup reserved pasta cooking liquid<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup heavy cream<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">tsp dried basil or Italian seasoning<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup Parmesan cheese, shredded<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Italian flat leaf parsley, chopped <\/span><\/li>\n<\/ul>\n<p><strong>For serving:<\/strong><\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">Parmesan cheese shredded<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nCook broccoli and pasta:<\/strong><\/p>\n<p>Bring one gallon of <strong>water<\/strong> to boil in a large pot. Add 1 TBS <strong>salt<\/strong> and <strong>broccoli.<\/strong> Cook until starting to soften (about 2 minutes), remove to a bowl of <strong>ice water<\/strong> with a spider.<\/p>\n<p>Return <strong>water<\/strong> to a boil and add <strong>pasta.<\/strong> Cook until just al dente, a minute or two less than manufacturer\u2019s directions. Reserve a cup of the <strong>starchy cooking water<\/strong>, then drain and set <strong>pasta<\/strong> aside.<\/p>\n<p><strong>Cook chicken:<\/strong><\/p>\n<p>While the <strong>pasta<\/strong> is cooking, cut the <strong>chicken<\/strong> into bite sized pieces. Season <strong>chicken<\/strong> with <strong>salt<\/strong> and <strong>pepper<\/strong> and a good sprinkle of <strong>Italian seasoning<\/strong>. Be generous.<\/p>\n<p>Heat a TBS each of reserved <strong>sun-dried tomato oil<\/strong> and <strong>cooking oil<\/strong> until hot in large saut\u00e9 pan. Add the <strong>chicken<\/strong> and saut\u00e9 until cooked through. About 2-3 minutes. You should get some nicely browned pieces. Remove <strong>chicken<\/strong> from pan and set aside.<\/p>\n<p><strong>Assembly:<\/strong><\/p>\n<p>Return empty pasta pot to medium heat, add a TBS each of reserved <strong>sun-dried tomato oil<\/strong> and <strong>cooking oil<\/strong>. Add 2 TBS of <strong>minced garlic<\/strong>. Saut\u00e9 for 30 seconds. Add the <strong>sun-dried tomatoes<\/strong> and <strong>basil or Italian seasoning,<\/strong> stir and saut\u00e9 for another 30 seconds.<\/p>\n<p>Add \u00bd cup reserved <strong>pasta cooking liquid<\/strong> and cooked <strong>chicken<\/strong> to pan and cook until heated through, 2 to 3 minutes.<\/p>\n<p>Return <strong>pasta<\/strong> and <strong>broccoli<\/strong> to pot. Mix.<\/p>\n<p>Add <strong>cream<\/strong> and 1-2 TBS <strong>butter.<\/strong> Mix and heat until hot and <strong>pasta<\/strong> is well coated. You can add more pasta cooking water if needed.<\/p>\n<p>Season to taste with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Serve:<\/strong><br \/>\nTransfer to a serving dish and top with <strong>parsley<\/strong>.<\/p>\n<p>Serve with additional <strong>Parmesan cheese<\/strong>\u00a0if desired.<strong><br \/>\n<\/strong><\/p>\n<p>We served this with a <strong>tossed green salad<\/strong> with <strong>Italian dressing<\/strong> and <strong>Cheesecake Factory dark bread<\/strong>, followed by <a href=\"https:\/\/nowellfamily.org\/cookbook\/2017\/11\/18\/hermit-bars\/\"><strong>Hermit Cookies<\/strong><\/a> with vanilla ice cream.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>with Chicken, Broccoli, Sun-Dried Tomatoes &amp; Cream Sauce \ud83d\ude0a Yield: 4 Servings Scott Nowell Circa 1994: This started as a church potluck meal, and it still works well 30 years later.
