Skipper<\/h5>\n<h5 style=\"text-align: center;\">Fall 1987<\/h5>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb broccoli, cleaned &amp; stalks peeled, florets and stalks separated <\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">cups chicken stock <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium onion, chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS cornstarch mixed in 2 TBS water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup heavy cream <\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt\/pepper <\/span><\/li>\n<\/ul>\n<p>Chop the <strong>broccoli stalks<\/strong> into small pieces.<br \/>\nBring the <strong>broccoli stalks<\/strong> and <strong>florets<\/strong> and <strong>chicken stock<\/strong> to a boil and simmer until the <strong>broccoli<\/strong> is very tender.<br \/>\nIn the soup kettle, melt 2 TBS <strong>butter<\/strong> and saut\u00e9 the <strong>onion<\/strong> until translucent.<br \/>\nPur\u00e9e the <strong>onion, broccoli<\/strong> and <strong>cooking liquid<\/strong> in a blender or food processor.<br \/>\nReturn the <strong>pur\u00e9e<\/strong> to the pan. You can pass it through a chinois or very fine strainer to make it even smoother.<br \/>\nMake a <strong>slurry<\/strong> with the <strong>water<\/strong> and <strong>cornstarch<\/strong> and stir it slowly into the simmering <strong>soup.<\/strong> You will see it thicken almost immediately.<br \/>\nJust before serving. add the <strong>heavy cream<\/strong> and heat it through, but do not boil.<br \/>\nCheck and adjust the <strong>seasoning<\/strong> if necessary.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 4 to 6 Servings Adapted from: Elizabeth E.
