I updated the first paragraph below to add information that I find most people don\u2019t know.<br \/>\nThis is a great accompaniment to roast beef or about anything else that can stand the lemon bite.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">bunches of broccoli<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS unsalted butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS fresh lemon juice<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp freshly ground pepper<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nT<\/strong>he outer surface of the bottom of stems on a bunch of <strong>broccoli<\/strong> is often quite tough, but that is easy to fix. Cut the bottom half inch off to get rid of the dry end. Then, peel the bottom few inches of the <strong>broccoli<\/strong> with a vegetable peeler.\u00a0 Separate the <strong>broccoli<\/strong> into spears of the desired size. Rather than tossing out the <strong>stem,<\/strong> cut it on a diagonal into 1\/8 to \u00bc inch thick coins. When cooking, put the <strong>stem<\/strong> pieces in the boiling <strong>water<\/strong> about a minute ahead of the <strong>spears.<\/strong><\/p>\n<p>Add about \u00bd inch of <strong>water<\/strong> to a saucepan and bring to a boil. Add 1 tsp <strong>salt.<\/strong><\/p>\n<p>Add <strong>broccoli<\/strong> and boil until crisp tender, 2 to 3 minutes. The water is really for steam, so the <strong>broccoli<\/strong> won\u2019t be covered.<\/p>\n<p>In a small saucepan warm the <strong>butter, lemon juice, salt<\/strong> and <strong>pepper<\/strong> over medium heat, stirring, until <strong>butter<\/strong> melts.<\/p>\n<p>Transfer <strong>broccoli<\/strong> to a heated bowl and pour <strong>sauce<\/strong> over the <strong>broccoli.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 4 Servings Scott Nowell 1984: This is a simple dish that is nearly too simple to justify a recipe.
