{"id":52941,"date":"2023-10-18T21:57:56","date_gmt":"2023-10-18T21:57:56","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=52941"},"modified":"2024-07-24T22:21:04","modified_gmt":"2024-07-24T22:21:04","slug":"pork-tenderloin-cutlets","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2023\/10\/18\/pork-tenderloin-cutlets\/","title":{"rendered":"Pork Tenderloin Cutlets"},"content":{"rendered":"<h3 style=\"text-align: center;\">with Sauteed Onions &amp; Spinach in Light Tomato Sauce<\/h3>\n<h4 style=\"text-align: center;\">Yield: 2 Servings<\/h4>\n<h6 style=\"text-align: center;\">Scott Nowell<\/h6>\n<p>Pork cutlet dish, version 2.<br \/>\nPork Tenderloin formed into cutlets with sauteed onions, a light tomato sauce and wilted spinach.<\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz pasta, farfalle, ziti, rotini, etc.<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb pork tenderloin<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium onion, julienned<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">tsp garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">15 oz can diced tomatoes<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">8 oz can tomato sauce<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup reserved pasta water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp (heaping), Better than Bouillon, chicken <\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz baby spinach<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried oregano<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried basil<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep:<\/strong><\/p>\n<p>Clean the <strong>pork tenderloin<\/strong> by removing <strong>silver skin,<\/strong> extra <strong>fat.<\/strong> Cut into four pieces. Stand the pieces on end and pound to \u00bc-inch thick with a meat mallet. Season both sides with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Peel, cut in half and julienne the <strong>onion<\/strong> into \u00bc-inch slices.<\/p>\n<p>Open the <strong>tomato<\/strong> and <strong>sauce<\/strong> cans.<\/p>\n<p>Heat a gallon of <strong>water<\/strong> to a boil in a large pot. When boiling, add about a TBS <strong>salt<\/strong> and <strong>pasta<\/strong> of choice.<\/p>\n<p>Heat <strong>olive oil<\/strong> in a large skillet over medium high heat until shimmering.<\/p>\n<p>Add <strong>cutlets<\/strong> and cook until just brown, about 2 to 3 minutes per side, until they reach 140\u00b0F. Remove to dish, cover loosely and set aside.<\/p>\n<p>Add a little more <strong>oil<\/strong> if needed and saut\u00e9 <strong>onions<\/strong> until starting to brown and soften. Add the <strong>garlic<\/strong> and saut\u00e9 for 30 seconds to remove raw flavor.<\/p>\n<p>To the skillet with <strong>onions<\/strong> add <strong>diced tomatoes, tomato sauce,<\/strong> reserved <strong>pasta water, BTB, oregano<\/strong> and <strong>basil.<\/strong> Mix well. Bring to a boil and add the <strong>spinach<\/strong> to the skillet. Reduce to a simmer and cook until the <strong>spinach<\/strong> is wilted, 2 to 3 minutes. Taste and adjust <strong>seasoning.<\/strong><\/p>\n<p>Return <strong>cutlets<\/strong> to skillet and spoon sauce over <strong>cutlets.<\/strong> Simmer for a couple of minutes to reheat <strong>cutlets.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>with Sauteed Onions &amp; Spinach in Light Tomato Sauce Yield: 2 Servings Scott Nowell Pork cutlet dish, version 2.
