This may have originated in New Orleans. I remember it only from the Kahala and it always used pork.<\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">(16-oz) package lo mein noodles, fresh<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">quarts chicken or beef stock or mix<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups cooked char sui pork, beef or chicken, julienned<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS soy sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">bunch green onions, finely chopped<\/span><\/li>\n<\/ul>\n<p>Cook <strong>noodles<\/strong> for 2 to 3 minutes in boiling water, drain and shock in cold water. Drain well and set aside.<\/p>\n<p>Bring <strong>stock<\/strong> to a boil in a large pot. Add <strong>meat<\/strong> and simmer 5 minutes. Reserving <strong>stock<\/strong>, strain <strong>meat<\/strong> out. Set <strong>meat<\/strong> aside and keep warm. Bring <strong>stock<\/strong> back to a boil and stir in <strong>soy<\/strong> <strong>sauce<\/strong>. Simmer 1 minute.<\/p>\n<p>To assemble, place drained <strong>noodles<\/strong> in individual bowls. Divide <strong>meat<\/strong> over <strong>noodles<\/strong>.
