Cumin, salt and pepper aren&#8217;t enough.<\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup jasmine rice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">clove garlic<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz ground beef<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz black beans <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">scallions<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">baby lettuce <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">Roma tomato<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp cumin<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">sour cream<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp cooking oil<\/span><\/li>\n<\/ul>\n<p><strong>Cook rice &amp; beans: <\/strong><\/p>\n<p>In a small pot, combine \u00bd cup <strong>rice,<\/strong> \u00be cup <strong>water,<\/strong> and a pinch of <strong>salt.<\/strong> Bring to a boil, then cover and reduce to a low simmer. Cook for 10 minutes.<\/p>\n<p>Drain <strong>beans.<\/strong><\/p>\n<p>Once <strong>rice<\/strong> has cooked 10 minutes, stir in <strong>drained beans,<\/strong> cover and cook until <strong>rice<\/strong> is tender, 5- to 8-minutes more.<\/p>\n<p><strong>Prep: <\/strong><\/p>\n<p>While <strong>rice<\/strong> and <strong>beans<\/strong> cook, wash and dry produce.<\/p>\n<p>Trim and thinly slice <strong>scallions,<\/strong> separating <strong>whites<\/strong> from <strong>greens.<\/strong> Peel and mince or grate <strong>garlic.<\/strong> Trim and discard root end from <strong>lettuce,<\/strong> thinly slice half the <strong>lettuce<\/strong> crosswise into ribbons. Dice <strong>tomato<\/strong> into \u00bc-inch pieces, season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Cook beef: <\/strong><\/p>\n<p>Heat a drizzle of <strong>oil<\/strong> in a large pan over medium-high heat. Add <strong>beef, scallion whites, garlic, cumin, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Cook, breaking up <strong>meat<\/strong> into pieces, until cooked through, 4- to 6-minutes. Taste and season with <strong>salt<\/strong> and <strong>pepper<\/strong> if desired.<\/p>\n<p>Keep covered off heat until ready to serve.<\/p>\n<p><strong>Make crema: <\/strong><\/p>\n<p>In a small bowl, combine <strong>sour cream<\/strong> and <strong>scallion greens.<\/strong> Add <strong>water<\/strong> 1 tsp at a time until mixture reaches a drizzling consistency.
