In other words, it\u2019s a complete meal in one pot, plus it\u2019s a great thing to cook when you want to eat well for a few meals without doing extra work.<br \/>\n<strong>Note:<\/strong> Divided in half so it only make servings for 4. Also increased the kielbasa to a whole package. Using andouille sausage would be a great change.<br \/>\nPrep: 20 Cook: 45 to 75<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">14<\/span><span class=\"ingredient-name\">oz smoked turkey kielbasa or andouille sausage, diced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium yellow onion, chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cup celery, diced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup red bell pepper, diced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic, minced or finely grated<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp packed dark brown sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp fresh thyme leaves<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">bay leaf<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS apple cider vinegar<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">cups chicken broth, plus more as needed<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">15-oz cans canned red beans, drained and rinsed<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup uncooked basmati or jasmine rice<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and black pepper to taste<\/span><\/li>\n<li><span class=\"id-ingredient-name\">chopped scallions, for garnish<\/span><\/li>\n<li><span class=\"id-ingredient-name\">crusty boule, for serving<\/span><\/li>\n<\/ul>\n<p>In a large soup pot, heat the <strong>oil<\/strong> over medium heat until shimmering.<\/p>\n<p>Add the <strong>kielbasa<\/strong> and cook, stirring occasionally, until lightly browned, about 5 minutes.<\/p>\n<p>Add the <strong>onion<\/strong>, <strong>celery<\/strong>, <strong>bell pepper<\/strong>, <strong>garlic<\/strong>, <strong>brown sugar<\/strong>, <strong>thyme,<\/strong>\u00a0<strong>bay leaf and \u00bd tsp salt<\/strong>\u00a0and cook, stirring constantly, until softened and aromatic, 3 to 4 minutes.<\/p>\n<p>Add the <strong>vinegar<\/strong> and use a wooden spoon to scrape up any browned bits from the bottom of the pot, then add the <strong>broth<\/strong>, <strong>beans<\/strong> and <strong>rice<\/strong>.<\/p>\n<p>Cook, uncovered, at a gentle simmer until the rice is cooked through, 30 to 45 minutes, adding more <strong>broth<\/strong> if the <strong>soup<\/strong> seems too thick.<\/p>\n<p>Season with <strong>salt<\/strong> and <strong>pepper<\/strong> to taste and discard the <strong>bay<\/strong> <strong>leaves<\/strong>.<\/p>\n<p>Serve hot, garnished with <strong>scallions<\/strong> and a some nice <strong>bread<\/strong>.<\/p>\n<p><strong>Storage:<\/strong> Refrigerate for up to 4 days or freeze for up to 3 months.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 4 (makes 5 to 6 cups) adapted from WaPo It features red beans and rice, of course, but also vegetables, broth and smoked turkey kielbasa.
