It\u2019s a great way to use up bits of vegetables you don\u2019t know what to do with, and to get a big dose of colorful veggies into your diet!<br \/>\nPrep: 15 Cook: 5<\/p>\n<p><strong>Premix sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup water or chicken stock<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Shaoxing wine<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp oyster sauce (or vegetarian oyster sauce)<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp sugar<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp sesame oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch ground white pepper<\/span><\/li>\n<\/ul>\n<p><strong>Premix sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS vegetable oil<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">slices ginger<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup sliced mushrooms (button, baby bella, oyster, or shiitake 1 cup = about 3 oz)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup carrots (thinly sliced on a diagonal; 1 cup = about 1 medium carrot)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup celery (thinly sliced on a diagonal; 1 cup = about 2 oz)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup asparagus (cut into 2-inch lengths on the diagonal; 1 cup)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup bell pepper (any color; de-seeded and thinly sliced; 1 cup = about \u00bd medium bell pepper)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup long <span style=\"color: #ff0000;\">hot pepper (red or green<\/span>, de-seeded and thinly sliced; 1 cup = about 1 long hot pepper)<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cloves garlic (minced)<\/span><\/li>\n<\/ul>\n<p><strong>Slurry:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp cornstarch (mixed into a slurry with 1 TBS water)<\/span><\/li>\n<\/ul>\n<p><strong>Premix sauce:<\/strong><\/p>\n<p>In a liquid measuring cup, combine the <strong>water<\/strong> (or <strong>chicken stock<\/strong>), <strong>Shaoxing wine, oyster sauce, salt, sugar, sesame oil,<\/strong> and <strong>white pepper.<\/strong><\/p>\n<p><strong>Make slurry:<\/strong><\/p>\n<p>Combine the <strong>cornstarch<\/strong> and <strong>water<\/strong> into a <strong>slurry<\/strong> and set aside.<\/p>\n<p><strong>Stir fry mushrooms:<\/strong><\/p>\n<p>In a wok over medium heat, add the <strong>oil<\/strong> and <strong>ginger.<\/strong> Cook until the <strong>ginger<\/strong> is lightly browned at the edges, and then add the <strong>mushrooms.<\/strong> Stir-fry until the <strong>mushrooms<\/strong> are tender.<\/p>\n<p><strong>Stir fry vegetables:<\/strong><\/p>\n<p>Add the <strong>carrot, celery, asparagus, bell pepper,<\/strong> and <span style=\"color: #ff0000;\"><strong>long hot pepper<\/strong><\/span>. Stir-fry for 1 minute, and then add the <strong>garlic<\/strong> and <strong>premix sauce<\/strong>. Bring it to a simmer, and cook for 1 minute, until the <strong>vegetables<\/strong> are tender.<\/p>\n<p><strong>Thicken sauce:<\/strong><\/p>\n<p>Mix in <strong>slurry<\/strong> to desired thickness and stir-fry until the <strong>vegetables<\/strong> are coated in <strong>sauce.<\/strong><\/p>\n<p>Serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 4 Woks of Life Use whatever vegetables you have on hand to make this everyday vegetable stir-fry.
