Season with <strong>salt<\/strong> and <strong>pepper,<\/strong> sprinkle with 2 TBS <strong>flour.<\/strong> Heat 1 TBS <strong>olive oil<\/strong> in a skillet over medium-high heat. Brown the <strong>pork,<\/strong> about 3 minutes per side. Transfer to a baking dish (reserve the skillet) and bake until a thermometer inserted into the center registers 140\u00b0F, 15 to 20 minutes. Let rest on a cutting board, 5 minutes.<\/p>\n<p>Add the <strong>mushrooms<\/strong> and \u00bc tsp <strong>salt<\/strong> to the skillet and cook until golden-brown, about 8 minutes. Add the remaining 1 TBS <strong>flour<\/strong> and cook, stirring, 1 minute. Add the <strong>broth<\/strong> and <strong>Marsala<\/strong> and bring to a boil. Add the <strong>cream<\/strong> and boil until the sauce thickens, about 8 minutes. Off the heat, stir in 2 tsp <strong>lemon juice<\/strong> and the <strong>parsley.<\/strong><\/p>\n<p>Heat the remaining 1 TBS <strong>olive oil<\/strong> in a pot over medium-high heat and cook the <strong>spinach<\/strong> until wilted, 3 to 4 minutes. Stir in the remaining 2 tsp <strong>lemon juice<\/strong> and season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Slice the <strong>pork.<\/strong><\/p>\n<p>Serve with <strong>mushroom sauce<\/strong> and <strong>spinach.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>with Mushroom Sauce and Spinach Yield: 4 Food Network Don\u2019t worry, still includes mushrooms.
