Pair with a nice crusty bread for sopping.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large carrots, peeled, cut on a diagonal into 2\u201d pieces<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large leeks, white and light-green parts only, cut on a diagonal into 2\u201d pieces<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large or 3 medium parsnips, peeled, halved lengthwise if large (remove woody center, if needed), cut on a diagonal into 2\u201d pieces<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">medium head of savoy cabbage, cut into 4 wedges, each with some core attached<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">flat-leaf parsley sprigs plus 1 tablespoon chopped for garnish<\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">cups homemade chicken stock or low-sodium canned chicken broth<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and freshly ground black pepper<\/span><\/li>\n<\/ul>\n<p>Place carrots, leeks, parsnips, cabbage, parsley sprigs, and stock in large heavy pot.<\/p>\n<p>Bring to a boil; reduce heat to low, cover, and simmer until vegetables are tender but not falling apart, about 20 minutes.<\/p>\n<p>Season with salt and pepper.
