Really taking this potato dish to the next level in deliciousness.<\/p>\n<ul>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup extra virgin olive oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">medium sized Yukon gold potatoes<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cage-free organic eggs<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup AP flour<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">onion finely diced<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cloves garlic finely minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS corn starch<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp sweet smoked Spanish paprika<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup white wine<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cups vegetable broth<\/span><\/li>\n<li><span class=\"id-ingredient-name\">handful freshly chopped parsley<\/span><\/li>\n<li><span class=\"id-ingredient-name\">sea salt<\/span><\/li>\n<li><span class=\"id-ingredient-name\">black pepper<\/span><\/li>\n<\/ul>\n<p>Slice 2 <strong>Yukon gold potatoes<\/strong> into rounds that are a \u00bc inch thick, crack 2 large <strong>eggs<\/strong> into a bowl, season with <strong>sea salt<\/strong> &amp; <strong>black pepper<\/strong> and whisk together, in another bowl add in a \u00bc cup of <strong>AP flour,<\/strong> season with <strong>sea salt<\/strong> &amp; <strong>black pepper<\/strong> and mix.<\/p>\n<p>To coat each slice of <strong>potato,<\/strong> start with the <strong>flour mixture<\/strong> and then into the <strong>egg wash,<\/strong> making sure to shake off any of the excess <strong>flour<\/strong> and <strong>egg wash.<\/strong><\/p>\n<p>Heat a large fry pan with a medium heat and add in \u2153 cup <strong>extra virgin olive oil,<\/strong> after 2 minutes start adding the <strong>coated potatoes,<\/strong> cook in batches to not over-crowd the pan, after 3 minutes flip to cook the other side, after another 3 minutes remove the <strong>potatoes<\/strong> from the pan and transfer to a plate with paper towels, continue to cook until all the <strong>potatoes<\/strong> are done.<\/p>\n<p>Using the same pan with the same heat, add in \u00bd finely diced\u00a0<strong>onion<\/strong> and 3 <strong>cloves garlic<\/strong> finely minced, mix with the <strong>olive oil,<\/strong> after 3 minutes add in 1 TBS of <strong>corn starch<\/strong> and a generous \u00bd tsp of <strong>sweet smoked paprika,<\/strong> mix until well combined, then add in \u00bd cup <strong>white wine<\/strong> and continue to mix until you form a thick <strong>sauce,<\/strong> then add in all the slices of <strong>potato<\/strong> (it\u00b4s ok if they are stacked around each other) and pour in 3 cups of <strong>vegetable broth<\/strong> (or just enough to cover all the <strong>potatoes),<\/strong> turn up the heat to a medium-high, at this point you don\u00b4t have to mix anything, but do give the pan a quick shake once in a while.<\/p>\n<p>After about 25 minutes and almost all the <strong>broth<\/strong> has been incorporated into the <strong>potatoes<\/strong> and they are fully cooked through, remove from the heat, serve directly out of the pan garnished with freshly chopped <strong>parsley,<\/strong> enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 4 Servings Spain on a Fork Spain The name Patatas a la Importancia translates to Important Potatoes.
