Feel free to use any herbs you have on hand for this recipe, including dried ones. This dish is also wonderful, served at room temperature for an outdoor buffet or a picnic.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup cherry tomatoes, preferably a mix of colors<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS plus 2 tsp olive oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and freshly ground pepper<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">center-cut salmon fillets (about 6 oz each)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS chopped fresh rosemary<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS chopped fresh tarragon<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb fingerling potatoes<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS chopped fresh flat-leaf parsley<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS fresh lemon juice<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep:<\/strong><br \/>\nSet a rack to the top position of the oven and preheat the oven to 450\u00b0F.<\/p>\n<p>Line a half sheet pan with a Silpat, foil or parchment paper. If using foil or parchment, spray with cooking spray.<\/p>\n<p>In a small bowl, toss together the <strong>cherry tomatoes<\/strong> and 1 tsp of the <strong>oil,<\/strong> and season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Brush the <strong>salmon<\/strong> with 1 tsp of the <strong>oil<\/strong> and season with the <strong>rosemary, tarragon, salt,<\/strong> and <strong>pepper.<\/strong> Set it aside.<\/p>\n<p>Cut the <strong>potatoes<\/strong> in half lengthwise and cut any large ones in half crosswise as well. (You want them to be about the same size.)<\/p>\n<p>In a bowl, toss together the <strong>potatoes<\/strong> and the 2 TBS <strong>oil.<\/strong><\/p>\n<p><strong>Start potatoes:<\/strong><br \/>\nPlace, cut side down, on the prepared pan and season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Roast for 8 minutes, then stir the <strong>potatoes.<\/strong><\/p>\n<p><strong>Roast salmon and tomatoes:<\/strong><br \/>\nPlace the <strong>tomatoes<\/strong> and <strong>salmon<\/strong> on the pan and continue roasting until the <strong>potatoes<\/strong> are fork-tender, the <strong>tomatoes<\/strong> just begin to burst, and the <strong>salmon<\/strong> is opaque throughout, 10\u201315 minutes longer.<\/p>\n<p><strong>Finish and serve:<\/strong><br \/>\nSprinkle the <strong>parsley<\/strong> over the <strong>vegetables<\/strong> and pour the <strong>lemon juice<\/strong> over the <strong>salmon.<\/strong> Serve right away.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>with Fingerling Potatoes &amp; Cherry Tomatoes Yield: 4 Adapted from: CKBK Simple cooking from Southeast France is distinguished by fresh flavors and seasonal ingredients.
