Tender chicken surrounded by crisp and tender veggies with crunchy cashews and an incredible sweet and savory sauce.<\/p>\n<p><strong>For the sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">TBS low sodium-soy sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS hoisin sauce<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">TBS apple cider vinegar<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS honey<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp toasted sesame oil<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp fresh minced ginger<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic minced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS cornstarch<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup water plus more as needed to thin out sauce<\/span><\/li>\n<\/ul>\n<p><strong>For the chicken and vegetables:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">medium skinless boneless chicken thighs or breasts cut into 1-inch cubes<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper <\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups broccoli florets <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">red bell pepper cut into chunks<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">green bell pepper cut into chunks (optional &#8211; for extra color)<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">red onion cut into narrow wedges (optional)<\/span><\/li>\n<li><span class=\"quantity\">\u2154<\/span><span class=\"ingredient-name\">cup roasted unsalted cashews<\/span><\/li>\n<\/ul>\n<p><strong>Optional garnishes:<\/strong><\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">toasted sesame seeds and chopped green onions<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nFor the sauce:<\/strong><\/p>\n<p>In a medium saucepan over medium heat, whisk together <strong>soy sauce, hoisin sauce, vinegar, honey, sesame oil, garlic, ginger, cornstarch<\/strong> and <strong>water<\/strong> until combined. Bring to a simmer, stirring frequently, until <strong>sauce<\/strong> thickens and bubbles. Remove from heat and set aside.<\/p>\n<p><strong>For the chicken and vegetables:<\/strong><\/p>\n<p>Preheat oven to 400\u00b0F.<\/p>\n<p>Line a half sheet pan with parchment paper or foil coated with cooking spray and set aside.<\/p>\n<p>Season <strong>chicken<\/strong> with <strong>salt<\/strong> and <strong>pepper<\/strong> then drizzle spoonfuls of <strong>sauce<\/strong> over the <strong>chicken<\/strong> coating well on both sides. Reserve at least half of the <strong>sauce<\/strong> for later.<\/p>\n<p>Cook in preheated oven for 8 minutes then remove the pan.<\/p>\n<p>Arrange the <strong>broccoli florets, bell peppers, onions,<\/strong> and <strong>cashews<\/strong> in a single layer around the <strong>chicken.<\/strong> Season the <strong>vegetables<\/strong> with <strong>salt<\/strong> and <strong>pepper<\/strong> and drizzle spoonfuls of the <strong>sauce<\/strong> and toss everything to coat.
