A quick marinade makes the chicken tasty and tender. Serve it right from the pan for an easy Tex-Mex family favorite.<\/p>\n<p><strong>For the marinade:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup freshly squeezed lime juice (from 1 to 2 limes)<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup freshly squeezed orange juice (from 1 small orange)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS pickling juice, from a jar of pickled jalape\u00f1os (optional)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS ancho chili powder (or chili powder blend)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp dried oregano<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp ground cumin<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<\/ul>\n<p><strong>For the chicken and vegetables:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large, red or yellow onion, cut into \u00bc-inch thick slices<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large, sweet bell peppers (red, yellow or green, or a combination), cut into \u00bc-inch thick slices<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">skinless, boneless chicken breast halves (about 1 \u00bc lb), cut into 1-inch strips<\/span><\/li>\n<li><span class=\"quantity\">8-12<\/span><span class=\"ingredient-name\">corn tortillas<\/span><\/li>\n<\/ul>\n<p><strong>For garnish:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">avocado, sliced<\/span><\/li>\n<li><span class=\"id-ingredient-name\">handful of fresh cilantro leaves<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lime, quartered<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Cooked rice and\/or beans<\/span><\/li>\n<\/ul>\n<p>Preheat the oven to 450\u00baF:<\/p>\n<p>Line and lightly <strong>oil<\/strong> a half-sheet pan.<\/p>\n<p><strong>Make the marinade:<\/strong> In a medium bowl, whisk together the<strong> lime juice, orange <\/strong>juice, <strong>pickling juice<\/strong>, <strong>chili powder, oregano, cumin,<\/strong> and <strong>salt.<\/strong> Whisk in the <strong>olive oil.<\/strong> Pour half of the <strong>marinade<\/strong> into a separate bowl or cup and set aside.<\/p>\n<p><strong>Marinate the chicken: <\/strong>Add the <strong>chicken<\/strong> to the bowl with the <strong>marinade.<\/strong> Toss to coat and set aside to marinate while the <strong>peppers<\/strong> and <strong>onions<\/strong> are roasting (about 15 minutes).<\/p>\n<p><strong>Cook the peppers and onions: <\/strong>In the center of a sheet pan, mound the <strong>onions<\/strong> and <strong>peppers.<\/strong> Drizzle the reserved half of the <strong>marinade<\/strong> over them and toss to coat.<\/p>\n<p>Spread them in one layer and roast for about 15 minutes, or until they begin to soften.<\/p>\n<p><strong>Cook the chicken with the peppers and onions: <\/strong>Add the <strong>chicken strips<\/strong> to the pan with the softened <strong>vegetables,<\/strong> distributing them among the <strong>peppers<\/strong> and <strong>onions.<\/strong> Drizzle any excess <strong>marinade<\/strong> over the pan.<\/p>\n<p>Bake for 15 minutes, or until the <strong>chicken<\/strong> is cooked through (at least 165\u00baF when measured with an instant read thermometer).<\/p>\n<p><strong>Broil the chicken and vegetables to char them: <\/strong>Set a rack 3 to 4 inches from the broiler and turn on the broiler. Broil for 2 to 3 minutes, or until the <strong>chicken<\/strong> and <strong>vegetables<\/strong> are lightly charred.<\/p>\n<p><strong>Warm the tortillas: <\/strong><span style=\"font-size: revert; color: initial;\">Wrap 1 to 3 <strong>tortillas<\/strong> in a damp paper towel and microwave for 30 seconds, or until hot.<\/span><\/p>\n<p>Wrap the warm <strong>tortillas<\/strong> in a napkin and set them on a plate.<\/p>\n<p><strong>Serve the fajitas: <\/strong>Transfer the <strong>chicken<\/strong> and <strong>vegetables<\/strong> to a warm platter. Bring the platter and the warm <strong>tortillas<\/strong> to the table for people to help themselves.
