This creamy version is topped with acres of light and flaky pastry and takes less than a half hour of hands-on time, making it easy enough for a weeknight and fun enough for a crowd.<\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">Nonstick cooking spray, for the pan<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS unsalted butter <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp fresh thyme leaves, chopped<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup AP flour, plus more for dusting<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cups low-sodium chicken broth<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and freshly ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">rotisserie chicken, skin discarded, and meat shredded (about 3 cups)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">14-oz bag frozen pearl onions, thawed<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large carrots, sliced into thin half-moons<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">stalks celery, finely diced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">17.3-oz packages puff pastry (4 sheets) <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large egg, beaten with a splash of water<\/span><\/li>\n<\/ul>\n<p>Preheat the oven to 400\u00b0F. Line and spray a half-sheet pan with <strong>cooking spray <\/strong>or coat lightly with<strong> vegetable oil.<\/strong><\/p>\n<p>Melt the <strong>butter<\/strong> with the <strong>thyme<\/strong> in a small saucepan over medium heat. Whisk in the <strong>flour<\/strong> and cook, stirring, until a sandy consistency, about 1 minute.<\/p>\n<p>Pour in the <strong>chicken broth,<\/strong> whisking constantly until smooth. Stir in 2 tsp <strong>salt<\/strong> and a few grinds of <strong>black pepper<\/strong> and bring to a boil.<\/p>\n<p>Lower the heat and simmer gently until thickened and the <strong>flour<\/strong> flavor is gone, about 10 minutes.<\/p>\n<p>Meanwhile, add the <strong>chicken, onions, carrots<\/strong> and <strong>celery<\/strong> to the prepared sheet pan and toss to combine, set aside.<\/p>\n<p>Stack 2 <strong>puff pastry sheets<\/strong> on top of each other on a lightly <strong>floured<\/strong> surface. Roll the <strong>puff pastry<\/strong> out to a 15-by-15-inch square. Cut the <strong>pastry<\/strong> into 1-inch strips so you have 15 strips total. Repeat with the remaining 2 <strong>puff pastry sheets.<\/strong><\/p>\n<p>Pour the <strong>gravy<\/strong> over top of the <strong>chicken mixture<\/strong> on the sheet pan. Arrange the <strong>pastry strips<\/strong> over the <strong>filling<\/strong> crosswise, overlapping them slightly so most of the <strong>filling<\/strong> is covered. Trim any overhang from the edges of the pan.
