The roasted bell peppers turn sweet and golden, while olives add a salty note that goes nicely with the mild, flaky fish and a garlicky parsley dressing. If you can\u2019t find hake, cod or flounder make fine substitutes, though you may have to adjust the roasting time. The thicker the fillets, the longer they will take to cook.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small bunch fresh lemon or regular thyme<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">lb fish fillets (cod, haddock)<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp fine sea salt, more as needed<\/span><\/li>\n<li><span class=\"id-ingredient-name\">pepper<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">large bell peppers, preferably 1 red, 1 orange and 1 yellow, thinly sliced<\/span><\/li>\n<li><span class=\"quantity\">4\u00bd<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil, more for drizzling<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup pitted, sliced black or green olives, or use a combination<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp sherry vinegar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">garlic clove, grated<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup loosely packed Italian parsley leaf, chopped<\/span><\/li>\n<\/ul>\n<p>Heat oven to <strong>400\u00b0F<\/strong>. Pull 1 TBS <strong>thyme leaves<\/strong> off the bunch and finely chop.<\/p>\n<p><strong>Season Fish: <\/strong><\/p>\n<p>Season <strong>fish<\/strong> all over with a large pinch or two of <strong>salt<\/strong> and <strong>pepper<\/strong> and rub with <strong>chopped thyme leaves.<\/strong> Let rest at room temperature while you prepare <strong>peppers.<\/strong><\/p>\n<p><strong>Prepare Peppers: <\/strong><\/p>\n<p>Spread <strong>peppers<\/strong> on a half-sheet pan and toss with 1\u00bd TBS <strong>oil,<\/strong> \u00bd tsp <strong>salt<\/strong> and the <strong>pepper.<\/strong> Top <strong>peppers<\/strong> with the remaining <strong>thyme sprigs.<\/strong><\/p>\n<p><strong>First Bake: <\/strong><\/p>\n<p>Roast, tossing occasionally, until <strong>peppers<\/strong> are softened and golden at the edges, 15 to 20 minutes.<\/p>\n<p><strong>Second Bake: <\/strong><\/p>\n<p>Increase oven temperature to 500\u00b0F. Push <strong>peppers<\/strong> to the edges of the pan, clearing a space in the center. Lay <strong>fish<\/strong> out on that empty space and drizzle with <strong>oil.<\/strong> Scatter <strong>olives<\/strong> over the top of <strong>fish<\/strong> and <strong>peppers.<\/strong> Roast until <strong>fish<\/strong> turns opaque and is cooked through, 10 to 14 minutes.<\/p>\n<p><strong>Dressing: <\/strong><\/p>\n<p>Meanwhile, combine <strong>vinegar, garlic<\/strong> and a pinch of <strong>salt<\/strong> in a bowl.
