Baked in a flavorful Mediterranean-style sauce with citrus, olive oil, fresh garlic, and spices.<\/p>\n<p><strong>For the sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">lemons, zest and juice <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup olive oil<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">TBS freshly minced garlic<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp dill weed<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp seasoned salt, more for later<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried oregano<\/span><\/li>\n<li><span class=\"quantity\">\u00bd-\u00be<\/span><span class=\"ingredient-name\">tsp ground coriander<\/span><\/li>\n<\/ul>\n<p><strong>For the fish<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb fresh green beans<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb cherry tomatoes<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large yellow onion sliced into half moons<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">lb halibut fillet, slice into 1\u00bd-inch pieces<\/span><\/li>\n<\/ul>\n<p>Preheat the oven to <strong>425\u00b0F<\/strong>.<\/p>\n<p>In a large mixing bowl, whisk the <strong>sauce ingredients<\/strong> together. Add the <strong>green beans, tomatoes,<\/strong> and <strong>onions<\/strong> and toss to coat with the <strong>sauce.<\/strong> With a large, slotted spoon or spatula, transfer the <strong>vegetables<\/strong> to a half-sheet pan. Keep the <strong>vegetables<\/strong> to one side or one half of the baking sheet and make sure they are spread out in one layer.<\/p>\n<p>Now, add the <strong>halibut fillet strips<\/strong> to the remaining <strong>sauce,<\/strong> toss to coat. Transfer the <strong>halibut fillet<\/strong> to the half-sheet pan next to the <strong>vegetables<\/strong> and pour any remaining <strong>sauce<\/strong> on top.<\/p>\n<p>Lightly sprinkle the <strong>halibut<\/strong> and <strong>vegetables<\/strong> with a little more <strong>seasoned salt.<\/strong><\/p>\n<p>Bake in 425\u00b0F heated oven for 15 minutes. Then transfer the half-sheet pan to the top oven rack and broil for another 3 minutes or so, watching carefully. The <strong>cherry tomatoes<\/strong> should begin to pop under the broiler.<\/p>\n<p>When ready, remove the <strong>baked halibut<\/strong> and <strong>vegetables<\/strong> from the oven. Serve with your favorite <strong>grain, Lebanese rice,<\/strong> or <strong>pasta.<\/strong><\/p>\n<p><strong>Cook&#8217;s tip: <\/strong><\/p>\n<p>As with any <strong>fish,<\/strong> do not overcook <strong>halibut.<\/strong> It is ready with it flakes easily. Serve immediately, if it sits too long, hal<strong>i<\/strong>but will turn a bit dry.<\/p>\n<p>If <strong>halibut<\/strong> is not available to you, a different white <strong>fish<\/strong> fillet will also work. <strong>Cod<\/strong> and <strong>sole<\/strong> are two good options.
