Sumac is also delicious sprinkled over grilled vegetables or in vinaigrettes. Bone-in chicken thighs and drumsticks will stay moist and become beautifully bronzed in the oven as the vegetables become golden brown and tender. The vibrant parsley mixture brings the entire dish together. Serve with hot cooked whole-wheat couscous, if you like.<\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">TBS olive oil, divided<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS sumac<\/span><\/li>\n<li><span class=\"quantity\">1\u00bc<\/span><span class=\"ingredient-name\">tsp kosher salt, divided<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp light brown sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"id-ingredient-name\">ground <span style=\"color: #ff0000;\"><strong>red pepper<\/strong><\/span> to taste<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb cauliflower florets<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">(6-oz) pkg. small rainbow carrots, halved lengthwise<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb bone-in chicken thighs, skinned<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb skinless drumsticks<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small lemon, halved lengthwise and thinly sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small red onion, cut into \u00be-in. wedges<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup finely chopped fresh flat-leaf parsley<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup chopped fresh cilantro<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS fresh lemon juice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small garlic clove, minced<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPreheat<\/strong> oven to <strong>425\u00b0F<\/strong>.<br \/>\nLine a half-sheet pan with foil, parchment or a Silpat.<\/p>\n<p><strong>Oil Mixture:<\/strong><\/p>\n<p>Combine 3 TBS <strong>oil<\/strong> with <strong>sumac,<\/strong> 1 tsp <strong>salt, brown sugar, paprika,<\/strong> and <span style=\"color: #ff0000;\"><strong>red pepper<\/strong><\/span> in a medium bowl.<\/p>\n<p>Place <strong>cauliflower<\/strong> and <strong>carrots<\/strong> on the half-sheet pan. Add half of <strong>oil mixture,<\/strong> toss to coat.<\/p>\n<p>Add <strong>chicken thighs, drumsticks,<\/strong> and <strong>lemon slices<\/strong> to sheet pan. Rub the remaining <strong>oil mixture<\/strong> over <strong>chicken.<\/strong> Bake at 425\u00b0F for 20 minutes.<\/p>\n<p>Stir <strong>vegetables.<\/strong> Sprinkle <strong>onion wedges<\/strong> over pan.
