{"id":54037,"date":"2024-07-23T16:18:34","date_gmt":"2024-07-23T16:18:34","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=54037"},"modified":"2026-04-23T21:17:38","modified_gmt":"2026-04-23T21:17:38","slug":"balsamic-fig-chicken","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2024\/07\/23\/balsamic-fig-chicken\/","title":{"rendered":"Balsamic Fig Chicken"},"content":{"rendered":"<h4 style=\"text-align: center;\">with Roasted Potatoes &amp; Mixed Greens<\/h4>\n<h5 style=\"text-align: center;\">Yield: 2 Servings<\/h5>\n<p>The fig jam adds a delicious fruity sweetness to the chicken.<\/p>\n<ul>\n<li><span class=\"quantity\">24<\/span><span class=\"ingredient-name\">oz potatoes<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lemon<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">fig jam<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">shallot <\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">oz rosemary<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">5-6 oz chicken cutlets <\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">tsp balsamic vinegar<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp better than bouillon chicken (BTB)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">oz mixed greens<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">tsp olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<\/ul>\n<p><strong>Roast potatoes:<\/strong><\/p>\n<p>Adjust rack to top position and preheat oven to 450\u00b0F.<\/p>\n<p>Wash and dry produce.<\/p>\n<p>Dice <strong>potatoes<\/strong> into \u00bd-inch pieces. Toss on a baking sheet with a drizzle of <strong>olive<\/strong>\u00a0<strong>oil, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Roast on top rack, tossing halfway through, until browned and tender, 20-25 minutes.<\/p>\n<p><strong>Prep:<\/strong><\/p>\n<p>While <strong>potatoes<\/strong> roast, halve, peel, and mince <strong>shallot.<\/strong><\/p>\n<p>Strip 1 tsp <strong>rosemary leaves<\/strong> from stems, finely chop leaves.<\/p>\n<p>Halve <strong>lemon.<\/strong><\/p>\n<p><strong>Cook chicken:<\/strong><\/p>\n<p>Pat <strong>chicken<\/strong> dry with paper towels and season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Heat a drizzle of <strong>olive oil<\/strong> in a large pan over medium-high heat.<\/p>\n<p>Add <strong>chicken<\/strong> and cook until browned and cooked through (155\u00b0F), 3-5 minutes per side.<\/p>\n<p>Transfer <strong>chicken<\/strong> to a cutting board. Lower heat to medium.<\/p>\n<p><strong>Make sauce:<\/strong><\/p>\n<p>Add <strong>shallot,<\/strong> chopped <strong>rosemary,<\/strong> and a drizzle of <strong>olive oil<\/strong> to same pan. Cook, stirring, until softened, 2-3 minutes.<\/p>\n<p>Stir in <strong>vinegar<\/strong> and <strong>jam.<\/strong> Simmer until syrupy, 1 minute.<\/p>\n<p>Stir in <strong>stock concentrate<\/strong> and \u00bd cup water. Cook until thick and glossy, 2-3 minutes.<\/p>\n<p>Add a splash of <strong>water<\/strong> if sauce seems too thick.
