{"id":54048,"date":"2024-07-23T16:52:28","date_gmt":"2024-07-23T16:52:28","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=54048"},"modified":"2026-04-27T20:41:18","modified_gmt":"2026-04-27T20:41:18","slug":"italian-chicken-over-lemony-spaghetti-2","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2024\/07\/23\/italian-chicken-over-lemony-spaghetti-2\/","title":{"rendered":"Italian Chicken Over Lemony Spaghetti"},"content":{"rendered":"<h4 style=\"text-align: center;\">Serves: 2<\/h4>\n<p>Italian-spiced chicken, tender zucchini, and al dente spaghetti all coated in a creamy, cheesy, lemon-spiked sauce.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">zucchini<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">clove garlic, minced <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lemon<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz spaghetti<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">6 oz boneless skinless chicken breast<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Italian seasoning<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp <strong><span style=\"color: #ff0000;\">red pepper flakes<\/span><\/strong><\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp Better Than Bouillon chicken<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS sour cream<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup Parmesan cheese<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp olive oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp cooking oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<\/ul>\n<p><strong>Prep:<\/strong><br \/>\nBring a large pot of <strong>salted water<\/strong> to a boil.<br \/>\nTrim and quarter <strong>zucchini<\/strong> lengthwise, cut crosswise into \u00bd-inch-thick pieces.<br \/>\nPeel and mince <strong>garlic.<\/strong><br \/>\nZest and quarter <strong>lemon.<\/strong><br \/>\n<strong>Cook pasta:<\/strong><br \/>\nOnce <strong>water<\/strong> is boiling, add <strong>spaghetti<\/strong> to pot. Cook, stirring occasionally, until al dente, 7-10 minutes.<br \/>\n<strong>Note:<\/strong> Reserve 1 cup <strong>pasta cooking water<\/strong>, then drain.<\/p>\n<p><strong>Zucchini:<\/strong><br \/>\nWhile <strong>pasta<\/strong> cooks, heat a drizzle of <strong>olive oil<\/strong> in a large, preferably nonstick, pan over medium-high heat. Add <strong>zucchini,<\/strong> cook, stirring occasionally, until browned and softened, 4-6 minutes. Season with <strong>salt<\/strong> and <strong>pepper.<\/strong><br \/>\nTurn off heat, transfer to a plate. Wipe out pan.<\/p>\n<p><strong>Cook chicken:<\/strong><br \/>\nMeanwhile, pat <strong>chicken<\/strong> dry with paper towels and season all over with <strong>Italian Seasoning, salt,<\/strong> and <strong>pepper.<\/strong><br \/>\nOnce <strong>zucchini<\/strong> is done, heat a large drizzle of <strong>oil<\/strong> in same pan over medium-high heat. Add <strong>chicken<\/strong> and cook until browned and cooked through (165\u00b0F), 3-5 minutes per side.<br \/>\nTurn off heat, transfer to a cutting board to rest.<br \/>\nOnce cool enough to handle, slice <strong>chicken<\/strong> crosswise.<\/p>\n<p><strong>Make sauce:<\/strong><br \/>\nHeat a drizzle of <strong>olive oil<\/strong> in pot used for <strong>spaghetti<\/strong> over medium-high heat.<br \/>\nAdd <strong>garlic,<\/strong> half the <strong>lemon zest,<\/strong> and a pinch of <span style=\"color: #ff0000;\"><strong>chili flakes<\/strong><\/span>. Cook, stirring, until fragrant, 20-30 seconds.<br \/>\nStir in \u00bd cup reserved <strong>pasta cooking water<\/strong>, <strong>BTB chicken<\/strong>, and juice from two <strong>lemon wedges.<\/strong><br \/>\nSimmer until thickened, 1-2 minutes. Top with <strong>chicken,<\/strong> remaining <strong>Parmesan,<\/strong> remaining <strong>lemon zest,<\/strong> and a pinch of <strong><span style=\"color: #ff0000;\">chili flakes<\/span><\/strong> if desired.
