{"id":54064,"date":"2024-07-24T20:48:16","date_gmt":"2024-07-24T20:48:16","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=54064"},"modified":"2026-04-20T18:14:46","modified_gmt":"2026-04-20T18:14:46","slug":"meatloaf-with-creamy-mushroom-sauce","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2024\/07\/24\/meatloaf-with-creamy-mushroom-sauce\/","title":{"rendered":"Meatloaf with Creamy Mushroom Sauce"},"content":{"rendered":"<h3 style=\"text-align: center;\">with Broccoli (or Green Beans) &amp; Garlic Mashed Potatoes<\/h3>\n<h4 style=\"text-align: center;\">Yield: 2<\/h4>\n<p>Very Simple Meatloaf with a delicious mushroom sauce.<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz potatoes<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">scallions<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz broccoli florets or green beans<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz ground beef<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup panko breadcrumbs<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp garlic powder, divided<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz button mushrooms<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp Better Than Bouillon beef<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS sour cream<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS cooking oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<\/ul>\n<p><strong>Prep &amp; cook potatoes:<\/strong><br \/>\nAdjust rack to top position and preheat oven to 425\u00b0F.<br \/>\nWash and dry produce.<br \/>\nDice <strong>potatoes<\/strong> into \u00bd-inch pieces. Trim and thinly slice <strong>scallions,<\/strong> separating <strong>whites<\/strong> from <strong>greens,<\/strong> mince <strong>whites.<\/strong><br \/>\nCut <strong>broccoli florets<\/strong> into bite-size pieces or trim <strong>green beans<\/strong>.<\/p>\n<p><strong> Cork potatoes:<\/strong><br \/>\nPlace <strong>potatoes<\/strong> in a large pot with enough salted <strong>water<\/strong> to cover by 2 inches. Bring to a boil and cook until tender, 15-20 minutes. Reserve \u00bd cup <strong>potato cooking liquid<\/strong>, then drain and return <strong>potatoes<\/strong> to pot.<\/p>\n<p><strong> Form meatloaves:<\/strong><br \/>\nWhile <strong>potatoes<\/strong> cook, in a large bowl, combine <strong>beef, panko, scallion whites,<\/strong> \u00bd tsp <strong>garlic powder,<\/strong> and 1 TBS <strong>water,<\/strong> season generously with <strong>salt<\/strong> and <strong>pepper.<\/strong><br \/>\nForm mixture into two 1-inch-tall <strong>loaves.<\/strong><\/p>\n<p><strong> Roast loaves &amp; vegetable:<\/strong><br \/>\nPlace <strong>meatloaves<\/strong> on one side of a lightly <strong>oiled<\/strong> baking sheet. Toss <strong>broccoli<\/strong> or <strong>green<\/strong> <strong>beans<\/strong> on empty side with a drizzle of <strong>oil,<\/strong> season generously with <strong>salt<\/strong> and <strong>pepper.<\/strong><br \/>\nRoast on top rack until <strong>meatloaves<\/strong> are cooked through and <strong>broccoli<\/strong> (or <strong>green beans)<\/strong> are browned and tender, 15-20 minutes.<\/p>\n<p><strong> Make sauce:<\/strong><br \/>\nWhile everything roasts, trim and thinly slice <strong>mushrooms.<\/strong> Heat a drizzle of <strong>oil<\/strong> in a medium pan over medium-high heat. Add <strong>mushrooms,<\/strong> season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Cook, stirring, until softened, 2-4 minutes.<br \/>\nStir in <strong>stock concentrate<\/strong> and \u00bd cup <strong>water<\/strong>. Bring to a boil, then reduce to a low simmer. Cook until slightly thickened, 2-3 minutes.<br \/>\nTurn off heat. Stir in 1\u00bd TBS <strong>sour cream<\/strong> and 1 TBS <strong>butter<\/strong> until melted and combined. Season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong> Mash potatoes:<\/strong><br \/>\nHeat pot with drained <strong>potatoes<\/strong> over low heat, add 1 TBS <strong>butter<\/strong>, 1\u00bd TBS <strong>sour cream,<\/strong> and \u00bd tsp <strong>garlic powder.<\/strong><br \/>\nMash until smooth and creamy, adding splashes of reserved <strong>potato cooking liquid<\/strong> as needed.
