A good glug of your best olive oil would also be welcome.<br \/>\nTime: 30 minutes<\/p>\n<p>Note: Samantha recommended this.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp fresh lemon zest and 2 TBS juice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">teaspoon sweet or smoked paprika<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">garlic cloves, grated<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb peeled, deveined large shrimp (tails removed)<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS unsalted butter (\u00bd stick)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large leeks, trimmed, then halved lengthwise, white and light green parts sliced crosswise \u00bd-inch thick (or 1 large onion, minced)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">15-oz can cannellini beans or other white beans, rinsed<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups chicken stock or vegetable stock<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS finely chopped fresh parsley (optional)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Toasted bread, for serving (optional)<\/span><\/li>\n<\/ul>\n<p>Combine <strong>lemon zest<\/strong>, <strong>paprika, garlic,<\/strong> \u00be tsp <strong>salt<\/strong> and \u00be tsp <strong>pepper<\/strong> in a medium bowl. Add <strong>shrimp<\/strong> and toss to coat.<\/p>\n<p>In a large pot, melt <strong>butter<\/strong> over medium-high heat. When <strong>butter<\/strong> is foaming, add <strong>shrimp<\/strong> and cook, stirring occasionally, until pink and starting to curl, 2 to 3 minutes. Using a slotted spoon, transfer <strong>shrimp<\/strong> to a plate, set aside.<\/p>\n<p>Add <strong>leeks,<\/strong> season with <strong>salt<\/strong> and <strong>pepper,<\/strong> and cook over medium until <strong>leeks<\/strong> are soft and starting to brown on the edges, 4 to 5 minutes, stirring occasionally. Add <strong>beans<\/strong> and <strong>chicken broth<\/strong> and bring to a boil over high. Lower heat and simmer, 8 to 10 minutes.
