A favorite menu item on a winter day at the caf\u00e9, this is also an easy soup to prepare at home.<br \/>\nJerusalem artichokes aka Sunchokes have a wonderful creamy texture, and an earthy, nutty flavor that blends perfectly with luxurious truffle oil.<\/p>\n<p>Note: I have no idea what the floater is.<\/p>\n<p><strong>For vegetable stock:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">yellow onion, peeled and halved<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium carrot, washed and halved<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">stalk celery, peeled and halved<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">leek, coarsely chopped<\/span><\/li>\n<li><span class=\"quantity\">9<\/span><span class=\"ingredient-name\">cups water<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp fine sea salt<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp black pepper<\/span><\/li>\n<\/ul>\n<p><strong>For soup:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium onion, chopped<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">clove garlic, diced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">lb sunchokes, peeled and chopped (quickly blanching sunchokes before peeling them makes the skin much easier to remove)<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">cups vegetable stock<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">few drops truffle oil<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep:<\/strong><\/p>\n<p>Bring a large stock pot of water to a boil. Blanch sunchokes for 30-60 seconds. Remove, set aside to cool. Discard water.<\/p>\n<p><strong><strong>Vegetable stock:<\/strong><\/strong><\/p>\n<p>Heat olive oil in the large stock pot. Saut\u00e9 onion until translucent; add other vegetables, and saut\u00e9 until they are sweating and cooked, 8-10 minutes. Add water and bring to a boil. Add salt and pepper and cook on medium heat for another 5-10 minutes, until broth has taken on the flavor of the vegetables. Strain and set liquid aside to use in soup.<\/p>\n<p><strong><strong>Soup:<\/strong><\/strong><\/p>\n<p>In a medium-sized pot over medium heat, melt butter and saut\u00e9 onion and garlic until barely translucent, about 5 minutes.<\/p>\n<p>Add sunchokes and vegetable stock. Let simmer about 30-40 minutes or until sunchokes are soft when you poke them with a fork.<\/p>\n<p>Remove and reserve 2 cups of stock.<\/p>\n<p>Blend with an immersion blender until smooth. Check the texture.
