{"id":54151,"date":"2024-07-29T17:45:10","date_gmt":"2024-07-29T17:45:10","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=54151"},"modified":"2024-07-29T17:51:55","modified_gmt":"2024-07-29T17:51:55","slug":"pear-stuffed-pork-chops","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2024\/07\/29\/pear-stuffed-pork-chops\/","title":{"rendered":"Pear-Stuffed Pork Chops"},"content":{"rendered":"<h4 style=\"text-align: center;\">Yield: 2<\/h4>\n<h6 style=\"text-align: center;\">Adapted from: <a href=\"https:\/\/www.cuisineathome.com\/recipes\/lunch-dinner\/sheet-pan-pear\">Cuisine At Home<\/a><\/h6>\n<p>For a classic comfort dish, stuffed and roasted pork chops hang out with potatoes, onions, green beans, and tomatoes for a sheet pan meal we\u2019re sure you\u2019ll return to often.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">strips bacon<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">bone-in pork chops or boneless cutlets, 1-inch thick<\/span><\/li>\n<li><span class=\"quantity\"><span class=\"ingredient-name\">\u00bd<\/span><\/span><span class=\"ingredient-name\">Bartlett pear, peeled, cored, and diced, or \u00bd can pears, drained and diced.<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup crumbled blue cheese<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS diced shallots<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and black pepper to taste<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz baby red or yellow potatoes, halved<\/span><\/li>\n<li><span class=\"quantity\">6-8<\/span><span class=\"ingredient-name\">oz green beans<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup chopped red onions<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Dijon mustard<\/span><\/li>\n<li><span class=\"id-ingredient-name\">as many grape tomatoes as you want<\/span><\/li>\n<\/ul>\n<p><strong>Bacon:<\/strong><br \/>\nSet broiler shelf to 6 inches from heat and second on middle rack.<\/p>\n<p>Preheat oven to 425\u00b0F.<br \/>\nBake <strong>bacon<\/strong> on a baking sheet until crisp, transfer to a paper-towel-lined-plate and reserve 1 oz drippings. Chop 1 strip <strong>bacon<\/strong> for filling and remaining strips for topping <strong>chops<\/strong> and <strong>vegetables.<\/strong><\/p>\n<p><strong>Prep pork:<\/strong><br \/>\nCut a 3-inch-long slit on the side of each <strong>chop,<\/strong> inserting the knife blade into, but not through, the other side. Keeping blade parallel to cutting board, carefully sweep it back and forth to enlarge pockets. Arrange <strong>chops<\/strong> on a baking sheet.<\/p>\n<p><strong>Filling:<\/strong><br \/>\nCombine <strong>pear,<\/strong> 1 strip <strong>chopped bacon, cheese,<\/strong> and <strong>shallots.<\/strong><br \/>\nDivide <strong>pear<\/strong> filling among pockets. Brush tops of <strong>chops<\/strong> with 1 TBS <strong>drippings,<\/strong> season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Vegetables:<\/strong><br \/>\nToss <strong>potatoes, green beans, onions,<\/strong> and <strong>Dijon<\/strong> with remaining TBS <strong>drippings,<\/strong> season with <strong>salt<\/strong> and <strong>pepper,<\/strong> then arrange around <strong>chops.<\/strong><br \/>\nRoast <strong>chops<\/strong> and <strong>vegetables<\/strong> 20 minutes. Remove from oven.<\/p>\n<p><strong>Broil:<\/strong><br \/>\nHeat broiler to high with rack 6 inches from element.<br \/>\nAdd <strong>tomatoes<\/strong> and remaining chopped <strong>bacon<\/strong> to baking sheet.<br \/>\nBroil <strong>chops<\/strong> and <strong>vegetables<\/strong> until a thermometer inserted into the thickest part of <strong>chops,<\/strong> but not touching <strong>bone,<\/strong> registers 145\u00b0F, 5\u20136 minutes.
