In other words, it\u2019s a tradition.<br \/>\nPrep: 30 Cook: 1 hr 10<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb kielbasa, sliced \u00bc-inch thick, on the bias<\/span><\/li>\n<li><span class=\"id-ingredient-name\">vegetable oil, as needed<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb dried red kidney beans, soaked for at least 4 hours or overnight <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">quarts chicken broth<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb red potatoes, cut into \u00bd-inch cubes<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz fresh kale, washed, rinsed, and torn into 1-inch pieces<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup red wine vinegar<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp freshly ground black pepper<\/span><\/li>\n<\/ul>\n<p><strong>Special equipment<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">5-<\/span><span class=\"ingredient-name\">to 7-quart Dutch oven<\/span><\/li>\n<\/ul>\n<p>Brown the <strong>kielbasa<\/strong> in a Dutch oven and set over medium-low heat until it has rendered most of its <strong>fat,<\/strong> about 15 minutes. Remove the <strong>kielbasa<\/strong> from the pot and set aside. If you do not have at least 2 tsp of <strong>fat,<\/strong> add enough <strong>vegetable oil<\/strong> to make 2 tsp.<\/p>\n<p>Cook the <strong>garlic<\/strong> in the <strong>fat<\/strong> for 1 to 2 minutes, stirring constantly to prevent the <strong>garlic<\/strong> from burning. Add the <strong>beans<\/strong> and <strong>chicken broth<\/strong> and cook, covered, for 45 minutes. After 45 minutes, stir in the <strong>potatoes,<\/strong> cover and cook for 15 minutes, stirring occasionally.<\/p>\n<p>Toss the <strong>kale<\/strong> into the pot, cover and cook for an additional 10 minutes, or just until it is tender, but not mushy.<\/p>\n<p>Sprinkle with the <strong>vinegar<\/strong> and <strong>pepper<\/strong> and stir to combine. Return the <strong>kielbasa<\/strong> to the pot and cook just until heated through.
