You can use a taco seasoning packet from the store, but it\u2019s very easy to make your own blend to suit your taste (and whip up extra, if you like, to have on hand for other dishes). If using a packet, it will also include salt, so adjust accordingly when seasoning. You can easily make this soup vegetarian by omitting the meat and using an extra can of beans or subbing in a meat substitute. Set up a colorful toppings bar and be sure to squeeze on a little lime to brighten up all the flavors.<\/p>\n<p><strong>For the taco seasoning:<\/strong> (equivalent to a 1-oz Packet)<\/p>\n<ul>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">TBS chili powder, to taste<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp ground cumin<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp smoked paprika<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp garlic powder<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp onion powder<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp dried oregano<\/span><\/li>\n<\/ul>\n<p><strong>For the soup:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup extra-virgin olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large yellow or red onion, finely chopped, plus more for serving<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt (such as Diamond Crystal) and black pepper<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">garlic cloves, finely chopped<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb ground beef, (or pork, turkey or chicken)<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\"><span style=\"color: #ff0000;\"><strong>jalape\u00f1os<\/strong><\/span>, finely chopped, to taste, plus more for serving<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS tomato paste<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">4-oz cans diced <span style=\"color: #ff0000;\"><strong>green chilis<\/strong><\/span> (see Tip)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">15-oz can pinto beans, drained and rinsed<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">15-oz can black beans, drained and rinsed<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">15-oz cans diced<strong><span style=\"color: #ff0000;\"> fire-roasted tomatoes<\/span><\/strong><\/span><\/li>\n<li><span class=\"quantity\">2\u00bd<\/span><span class=\"ingredient-name\">cups low-sodium chicken or vegetable broth, or water<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups frozen corn<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Handful cilantro leaves and tender stems, roughly chopped <\/span><\/li>\n<\/ul>\n<p><strong>For serving: <\/strong><\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">chopped avocado, pickled red onion, grated Cheddar, pickled jalape\u00f1os, sour cream, tortilla chips and\/or lime wedges, for serving (optional)<\/span><\/li>\n<\/ul>\n<p>If making your own<span style=\"color: #ff0000;\"><strong> taco seasoning<\/strong><\/span>: Mix the<strong><span style=\"color: #ff0000;\"> chili powder<\/span>, cumin, smoked paprika, garlic powder, onion powder<\/strong> and <strong>dried oregano<\/strong> in a small bowl. Set it aside.<\/p>\n<p><strong>Make the soup: <\/strong>In a large pot or Dutch oven, heat the <strong>oil<\/strong> over medium. Add the <strong>onion<\/strong> and cook, stirring occasionally, until golden, 8 to 10 minutes. Sprinkle with a little <strong>salt,<\/strong> reduce the heat to medium-low, stir in the <strong>garlic<\/strong> and cook until fragrant, about 1 minute.<\/p>\n<p>Increase the heat to medium, add the <strong>ground beef,<\/strong> breaking it up with a spoon, and brown until all the pink is gone, about 5 minutes. Season with <strong>salt<\/strong> (about 1 tsp) and <strong>black pepper.<\/strong> Add the <span style=\"color: #ff0000;\"><strong>jalape\u00f1o<\/strong> <\/span>and the <span style=\"color: #ff0000;\"><strong>taco seasoning<\/strong><\/span> and stir for 1 minute. Push the <strong>meat<\/strong> to the sides of the pan, making a little space in the center, and add the <strong>tomato paste.<\/strong> Cook to deepen its color, about 1 minute, then stir everything together.<\/p>\n<p>Add the <span style=\"color: #ff0000;\"><strong>green chilis<\/strong><\/span> and their <strong>liquid,<\/strong> and the <strong>pinto<\/strong> and <strong>black beans.<\/strong> Season with <strong>salt<\/strong> (about 2 tsp). Stir in the <strong>tomatoes<\/strong> and their <strong>juices,<\/strong> and the <strong>broth.<\/strong> Increase the heat to medium-high and bring to a boil. Reduce to medium-low and simmer, covered, stirring occasionally, until the flavors meld, about 20 minutes.<\/p>\n<p>Taste for <strong>seasoning,<\/strong> adding <strong>salt, pepper,<\/strong> and <span style=\"color: #ff0000;\"><strong>chili powder<\/strong><\/span>, if desired. Stir in the <strong>frozen corn<\/strong> and <strong>cilantro.<\/strong> Cover and simmer until the <strong>corn<\/strong> has heated through, about 10 minutes. Serve with toppings of choice.
