{"id":54203,"date":"2024-07-30T22:04:22","date_gmt":"2024-07-30T22:04:22","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=54203"},"modified":"2025-05-10T22:25:10","modified_gmt":"2025-05-10T22:25:10","slug":"szechuan-chicken","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2024\/07\/30\/szechuan-chicken\/","title":{"rendered":"Szechuan Chicken"},"content":{"rendered":"<h4 style=\"text-align: center;\">Yield: 2 Servings<\/h4>\n<h6 style=\"text-align: center;\">Scott Nowell<\/h6>\n<p>Maybe not authentic, but it varies so much it&#8217;s impossible to know what is.<\/p>\n<p><strong>Chicken:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">oz boneless skinless chicken breasts<\/span><\/li>\n<\/ul>\n<p><strong>Vegetables:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">onion, chopped 1-inch pieces<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb button mushrooms, sliced<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup carrot, sliced \u215b-inch-thick on diagonal or matchsticks<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">zucchini, quartered and sliced \u00bd inch thick<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup celery sliced diagonally lengthwise to match sticks<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup bamboo shoots sliced to match sticks (optional)<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup water chestnuts, sliced (optional)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"ingredient-name\">equal amount of ginger minced<\/span><\/li>\n<li><span class=\"quantity\">4-8<\/span><span class=\"ingredient-name\">dried <strong><span style=\"color: #ff0000;\">Szechuan peppers<\/span><\/strong><\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS vegetable oil<\/span><\/li>\n<\/ul>\n<p><strong>Sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup chicken stock<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS corn starch<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp soy sauce<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup Hoisin sauce<\/span><\/li>\n<\/ul>\n<p><strong>Velvet the Chicken: <\/strong><\/p>\n<p>Slice <strong>breasts<\/strong> in half or thirds, length wise to make thin cutlets. Slice cutlets on diagonal into \u215b to \u00bc inch thick slices. In a bowl add sliced <strong>chicken, salt, egg white, white pepper,<\/strong> <strong>sesame seed oil<\/strong>, 1\u00bd TBS of <strong>corn starch<\/strong> and 1 TBS of <strong>oil.<\/strong> Mix everything together well. Marinate for 15 minutes.<\/p>\n<p><strong>Premix sauce:<\/strong><\/p>\n<p>In a small bowl, mix 1 TBS <strong>corn starch<\/strong> into 1 cup <strong>chicken stock<\/strong> with 2 tsp <strong>soy sauce<\/strong> and \u00bc cup <strong>hoisin sauce.<\/strong> Whisk to combine. Set aside.<\/p>\n<p><strong>Stir fry:<\/strong><\/p>\n<p>Heat 2 tsp <strong>oil<\/strong> in wok until starting to smoke. Add <strong>garlic<\/strong> and <strong>ginger,<\/strong> cook for 15 seconds and add the <strong>chicken.<\/strong> Stir fry until cooked through. Remove to bowl.<\/p>\n<p>Heat 2 tsp <strong>oil<\/strong> in wok and add <strong><span style=\"color: #ff0000;\">Szechuan peppers<\/span><\/strong><strong>.<\/strong> Stir fry 30 seconds. Add <strong>vegetables<\/strong> and stir fry for 2-3 minutes until starting to soften. Remove to bowl with <strong>chicken.<\/strong><\/p>\n<p><strong>Sauce &amp; finish:<\/strong><\/p>\n<p>Add <strong>premix sauce<\/strong> into wok, stir and bring to a boil and cook until thickened.<\/p>\n<p>Return <strong>chicken<\/strong> and <strong>vegetables<\/strong> to wok and mix with <strong>sauce<\/strong> until heated through and <strong>sauce<\/strong> boils.<\/p>\n<p>Adjust seasoning with additional <strong>soy, hoisin<\/strong> as needed.<\/p>\n<p>Remove from heat, serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 2 Servings Scott Nowell Maybe not authentic, but it varies so much it&#8217;s impossible to know what is.
