{"id":54208,"date":"2024-07-30T22:47:36","date_gmt":"2024-07-30T22:47:36","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=54208"},"modified":"2024-07-30T22:48:31","modified_gmt":"2024-07-30T22:48:31","slug":"chicken-with-garlic-sauce","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2024\/07\/30\/chicken-with-garlic-sauce\/","title":{"rendered":"Chicken with Garlic Sauce"},"content":{"rendered":"<h4 style=\"text-align: center;\">Yield: 2 to 4 Servings<\/h4>\n<h6 style=\"text-align: center;\">Sue &amp; Gambo<\/h6>\n<p>Slightly spicy chicken with garlic sauce stir-fry recipe.<\/p>\n<ul>\n<li><span class=\"quantity\"><strong>Chicken <\/strong><\/span><span class=\"ingredient-name\">and Marinade<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb of chicken breast and\/or thighs sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch of salt<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch of white pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">egg<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS of corn starch<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">TBS oil<\/span><\/li>\n<\/ul>\n<p><strong>Vegetables<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup sliced mushrooms<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup sliced white onions<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup sliced red, green and\/or orange peppers<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup of celery, 2-inch pieces, split into narrow strips.<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup of sliced Black Fungus (wood ear mushrooms) cut into thin strips<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup green onions chopped into 2-inch pieces<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">TBS oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp minced garlic<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp sliced ginger<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp <strong><span style=\"color: #ff0000;\">crushed red pepper<\/span><\/strong><\/span><\/li>\n<\/ul>\n<p><strong>Premix sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS of white vinegar<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS of cooking sherry wine<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS of oyster sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS of sugar<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">TBS sesame seed oil<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">TBS of Koon Chun double black soy sauce<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS of water<\/span><\/li>\n<\/ul>\n<p><strong>Marinate the chicken<\/strong><\/p>\n<p>Add pinch of <strong>salt,<\/strong> pinch of <strong>white pepper<\/strong>, 1 <strong>egg<\/strong> with the 12 oz of <strong>chicken.<\/strong> Mix well.<\/p>\n<p>Add around 3 TBS of <strong>corn starch<\/strong> to the <strong>chicken.<\/strong> Mix again.<\/p>\n<p>Lastly around 1 to 2 TBS of <strong>oil<\/strong> to the <strong>chicken<\/strong> and mix again.<\/p>\n<p><strong>Premix sauce: <\/strong><\/p>\n<p>Mix 1 TBS <strong>oyster sauce,<\/strong> 1 TBS <strong>sugar,<\/strong> \u00bd TBS <strong>sesame seed oil<\/strong>, \u00bd TBS <strong>double black soy sauce<\/strong>, and 2 TBS of <strong>water.<\/strong><\/p>\n<p><strong>Slurry:<\/strong><\/p>\n<p>Mix 2 TBS of <strong>water<\/strong> with 1 TBS of <strong>corn starch<\/strong> as a thickening agent for the <strong>sauce.<\/strong><\/p>\n<p><strong>Boil the vegetables<\/strong><\/p>\n<p>Boil the <strong>celery, wood ear mushrooms, green peppers,<\/strong> and <strong>mushrooms<\/strong> for 4-5 minutes<\/p>\n<p>Set the cooked <strong>vegetables<\/strong> aside.<\/p>\n<p><strong>Cook the chicken<\/strong><\/p>\n<p>Add some oil to the wok and then cook the <strong>chicken<\/strong> until it is golden brown and cooked through. After it\u2019s cooked, set the <strong>chicken<\/strong> aside in a bowl.<\/p>\n<p><strong>Stir fry<\/strong><\/p>\n<p>Add some <strong>oil<\/strong> to the wok and then minced <strong>garlic,<\/strong> sliced <strong>ginger<\/strong> and <strong><span style=\"color: #ff0000;\">crushed red pepper<\/span><\/strong>.<\/p>\n<p>Stir for a few seconds and next add the <strong>cooked vegetables<\/strong> and stir fry. After a minute add a TBS of <strong>white vinegar<\/strong> and a TBS of <strong>Shaoxing wine.<\/strong> Stir through. Add <strong>premix sauce.<\/strong><\/p>\n<p>Add <strong>slurry<\/strong> a little bit at a time until the sauce is to your preferred thickness.<\/p>\n<p>Lastly add the <strong>chicken<\/strong> and the <strong>chopped green onions<\/strong> and stir for a minute or two.<\/p>\n<p>Serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 2 to 4 Servings Sue &amp; Gambo Slightly spicy chicken with garlic sauce stir-fry recipe.
