Second, we think it could be improved some. The sauce was on the thick side. A bit more pasta water could have thinned it, but there could also be more sauce, so increase the sauce ingredients next time. I also used heavy cream instead of milk. But I thought I added enough water to fix that. The spinach is cooked first, but it should have been last, or cooked right in the sauce before the final mix.<\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz rigatoni or similar pasta<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups baby spinach<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">15-oz can artichoke hearts, quartered<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz boneless skinless chicken breasts<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; black pepper<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS AP flour<\/span><\/li>\n<li><span class=\"quantity\">\u00bd-1<\/span><span class=\"ingredient-name\">cup chicken broth<\/span><\/li>\n<li><span class=\"quantity\">\u00bd-1<\/span><span class=\"ingredient-name\">cup milk (or cream)<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup shredded mozzarella<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup freshly grated Parmesan, plus more for garnish<\/span><\/li>\n<\/ul>\n<p><strong><br \/>Prep:<\/strong><\/p>\n<p>Tenderize <strong>chicken breast<\/strong> with a jacquard, then slice into bite sized pieces. Season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Cook pasta:<\/strong><\/p>\n<p>In a large pot of salted boiling water, cook <strong>pasta<\/strong> until al dente.<\/p>\n<p>Reserve \u00bd cup <strong>pasta water.<\/strong> Drain the remaining <strong>water.<\/strong><\/p>\n<p><strong>Cook chicken:<\/strong><br \/>In a large skillet over medium heat, heat 1 TBS <strong>oil.<\/strong> Add <strong>garlic<\/strong> and <strong>chicken<\/strong> to skillet. Cook until chicken is golden and nearly cooked through. Remove to bowl.<\/p>\n<p><strong>Finish:<\/strong><br \/>To skillet, add <strong>butter<\/strong> and let melt. Add <strong>flour<\/strong> and whisk until golden, 1 minute, then add <strong>broth, milk <\/strong>or<strong> cream, mozzarella<\/strong> and <strong>Parmesan.<\/strong> Stir in <strong>artichokes. <\/strong>Season with <strong>salt<\/strong> and <strong>pepper.<\/strong>\u00a0<\/p>\n<p>Add in the <strong>spinach<\/strong> and cook until <strong>spinach<\/strong> is wilted, 2 minutes.<\/p>\n<p>Add cooked <strong>pasta<\/strong> to skillet and toss with sauce until coated. Return <strong>chicken<\/strong> to the skillet and toss to combine.
