Provides the same crunchy and tangy buttermilk coating we all know and love minus the excess grease. Time to put that air fryer to good use!<\/p>\n<p><strong>Notes:<\/strong> It did get crunchy and had a good taste. Needs more salt though. Using a 5lb chicken, it definitely needed to be done in two batches and took 35 minutes per batch. Doing it in a regular oven in one batch would probably work as well.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">lb chicken wings (chicken legs, thighs or chicken breast)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups buttermilk (\u00bd cup Saco Buttermilk powder &amp; 2 cups water or milk)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large eggs<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp <span style=\"color: #ff0000;\">hot sauce<\/span><\/span> (optional)<\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp salt (or to taste)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp pepper (or to taste)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp baking powder<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">tsp baking soda<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup AP flour<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">tsp paprika (sweet or smoked)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp garlic powder<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp onion powder<\/span><\/li>\n<\/ul>\n<p><strong>Special equipment: <\/strong><\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">3.5-quart air fryer<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep the chicken:<\/strong>\u00a0 Pat the <strong>chicken<\/strong> dry with paper towels. <strong>Breast<\/strong> pieces should be cut in half.<\/p>\n<p><strong>Prepare the buttermilk mixture:<\/strong> To a large bowl add the <strong>buttermilk, eggs, paprika, <span style=\"color: #ff0000;\">hot sauce <\/span><\/strong>(optional)<strong>, salt, pepper<\/strong> and whisk until combined. Whisk in the <strong>baking powder<\/strong> and <strong>baking soda.<\/strong> In a shallow dish mix the <strong>flour <\/strong>with the <strong>paprika, garlic powder<\/strong> and<strong> onion powder.<\/strong><\/p>\n<p><strong>Dredge the chicken:<\/strong><\/p>\n<p>First dredge the <strong>chicken<\/strong> in <strong>flour<\/strong> on all sides.<\/p>\n<p>Then dip pieces into the <strong>buttermilk<\/strong> mixture.<\/p>\n<p>Dredge the <strong>chicken<\/strong> in <strong>flour<\/strong> one more time, then place the chicken on a plate or rack, and repeat with all <strong>chicken<\/strong> pieces.<\/p>\n<p><strong>Cook the chicken:<\/strong><\/p>\n<p>Preheat air fryer and basket to 375\u00b0F,<\/p>\n<p>When preheated, carefully remove the basket and place the <strong>chicken<\/strong> in the air fryer basket, allowing enough room between each piece to flow around. Spray the <strong>chicken<\/strong> with a bit of <strong>cooking spray<\/strong> or brush with <strong>oil.<\/strong><\/p>\n<p>Return basket with <strong>chicken<\/strong> to air fryer and cook on 375\u00b0F for about 20 minutes, flip over, spray with more <strong>cooking oil<\/strong> or brush with <strong>oil,<\/strong> and cook for another 10 minutes.<\/p>\n<p><strong>Check the temperature of the chicken:<\/strong><\/p>\n<p><strong>Dark meat<\/strong> and <strong>wings<\/strong> should be at 180\u00b0F or higher in the thickest part.<\/p>\n<p><strong>Breast pieces<\/strong> should be 160\u00b0F. They may be done before <strong>legs<\/strong> and <strong>thighs.<\/strong><\/p>\n<p>Remove to a plate or rack and cover loosely with foil.<\/p>\n<p>Repeat with remaining <strong>chicken<\/strong> if doing in batches. Cooking time may vary depending on your air fryer.<\/p>\n<p><strong>Notes:<\/strong><\/p>\n<p>It took me about 30 minutes to cook the <strong>chicken<\/strong> in the air fryer, but each air fryer is different, so read your air fryer\u2019s manual to see how long you should cook it for.<\/p>\n<p>I also only added enough <strong>chicken<\/strong> to the air fryer so that it\u2019s in one layer and not stack any chicken pieces on top of each other. This way you\u2019ll get evenly cooked <strong>chicken<\/strong> and crispy all around.
