It can be prepared and cooked in 40 minutes! You can use turkey kielbasa to cut down on the fat, but not the flavor. Season with hot pepper sauce if you like.<\/p>\n<p><strong>Notes:<\/strong> As a stand alone meal it would be nice. As a side dish it had too much meat and was really coarse. Probably be better with minced sausage, onion and pepper.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups water<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup uncooked rice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">(14 oz) package Andouille sausage or turkey kielbasa, cut diagonally into \u00bc inch slices (half as much and minced)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">onion, chopped (minced)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">green bell pepper, chopped (minced)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">clove chopped garlic<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">(15 oz) cans canned kidney beans, drained<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">(15 oz) can whole peeled tomatoes, chopped<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp dried oregano<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt to taste<\/span><\/li>\n<\/ul>\n<p>Gather the ingredients.<\/p>\n<p><strong>Prepare the rice: <\/strong><\/p>\n<p>Bring <strong>water<\/strong> to a boil in a saucepan. Add <strong>rice<\/strong> and stir. Reduce heat, cover, and simmer for 20 minutes.<\/p>\n<p><strong>Make the red bean mixture:<\/strong><\/p>\n<p>Meanwhile, cook <strong>sausage<\/strong> in a large skillet over low heat for 5 minutes.<\/p>\n<p>Stir in <strong>onion, green pepper,<\/strong> and <strong>garlic,<\/strong> saut\u00e9 until tender.<\/p>\n<p>Add in <strong>beans<\/strong> and <strong>tomatoes<\/strong> with <strong>juice.<\/strong> Season with <strong>oregano, pepper,<\/strong> and <strong>salt.<\/strong><\/p>\n<p>Simmer uncovered for 20 minutes.
