{"id":54356,"date":"2024-08-28T22:56:25","date_gmt":"2024-08-28T22:56:25","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=54356"},"modified":"2026-04-19T19:17:10","modified_gmt":"2026-04-19T19:17:10","slug":"macaroni-and-beef","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2024\/08\/28\/macaroni-and-beef\/","title":{"rendered":"Macaroni and Beef"},"content":{"rendered":"<h4 style=\"text-align: center;\">Yield: 4<\/h4>\n<h6 style=\"text-align: center;\">Adapted from: <a href=\"https:\/\/www.simplyrecipes.com\/recipes\/hamburger_and_macaroni\/\">Simply Recipes<\/a><\/h6>\n<p>This hamburger and macaroni dish has been around for many years.\u00a0 It has many names including &#8220;goulash&#8221; or &#8220;American chop suey&#8221; or &#8220;Hamburger Noodle Casserole&#8221; or &#8220;HMO (Hamburger Macaroni Onions)&#8221;.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups uncooked macaroni<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS extra virgin olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb ground beef<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">yellow onion, chopped (or mixed chopped green onion greens and yellow onion)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small head broccoli, separated into small florets<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp seasoned salt (I use \u00bd tsp garlic powder, \u00bd tsp onion powder, \u00bd tsp paprika)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">pinch <span style=\"color: #ff0000;\"><strong>chili pepper flakes<\/strong><\/span><\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp celery seed<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">(28-oz) can diced tomatoes<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS Worcestershire sauce<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup chopped fresh parsley<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and freshly ground black pepper to taste<\/span><\/li>\n<\/ul>\n<p><strong><br \/>Cook the pasta:<\/strong><\/p>\n<p>Get a large pot of <strong>salted<\/strong> hot <strong>water<\/strong> (1 TBS of <strong>salt<\/strong> for 2 quarts of <strong>water)<\/strong> boiling and begin cooking the <strong>macaroni<\/strong> as per the directions on the <strong>macaroni<\/strong> package.<\/p>\n<p><strong>Drain the pasta:<\/strong><\/p>\n<p>When the <strong>pasta<\/strong> is al dente, reserve 1 cup of the <strong>pasta cooking water<\/strong>. Use a slotted spoon or spider to remove the <strong>pasta<\/strong> to an <strong>oiled<\/strong> bowl. Set drained pasta aside.<\/p>\n<p><strong>Cook the broccoli:<\/strong><\/p>\n<p>Add the broccoli to the pasta pot.<\/p>\n<p>Fill a bowl with cold <strong>water<\/strong> and <strong>ice.<\/strong> Cook <strong>broccoli<\/strong> until it starts to soften, 2-3 minutes.\u00a0 Use a slotted spoon or spider to remove the <strong>broccoli<\/strong> to the bowl of <strong>ice water.<\/strong> Drain the <strong>water<\/strong> from the pasta pot. When the broccoli is cooled, remove it from the ice water and discard the ice water.<\/p>\n<p><strong>Prepare the sauce:<\/strong><\/p>\n<p>In the empty pasta pot, brown the <strong>ground beef<\/strong> in a TBS of <strong>olive<\/strong> <strong>oil<\/strong> on high heat. Stir only infrequently so that the <strong>ground beef<\/strong> has an opportunity to brown.<\/p>\n<p>When the <strong>beef<\/strong> has mostly browned, add the <strong>onions<\/strong> to the pan and toss to combine. Cook until the <strong>onions<\/strong> are soft, about 4 to 6 minutes.<\/p>\n<p><strong>Add the seasonings and tomatoes:<\/strong><\/p>\n<p>Add the <strong>celery seed,<\/strong> a dash of <span style=\"color: #ff0000;\"><strong>crushed red pepper (optional)<\/strong><\/span> and <strong>seasoned salt<\/strong> or equivalent. Pour in <strong>canned tomatoes,<\/strong> add the <strong>Worcestershire sauce<\/strong> and stir to combine. Simmer for 5 minutes.<\/p>\n<p><strong>Add the cooked pasta:<\/strong><\/p>\n<p>Mix in the drained and cooked <strong>macaroni<\/strong>, <strong>broccoli,<\/strong> and the <strong>parsley.<\/strong> Cook for another 5 minutes.
