A 12\u201d skillet can handle 4 to 5 servings.<\/p>\n<ul>\n<li><span class=\"quantity\">1-n<\/span><span class=\"ingredient-name\">Russet potatoes<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium yellow onion, chopped (optional)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS vegetable oil or olive oil<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup water (optional)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and fresh ground pepper<\/span><\/li>\n<\/ul>\n<p>\u00a0<\/p>\n<p><strong>Prep:<\/strong><\/p>\n<p>The <strong>potatoes<\/strong> can be peeled or unpeeled. If you are not peeling them, rinse and scrub under cool water.<\/p>\n<p>You can partially cook the <strong>potatoes<\/strong> in the microwave to save time.<\/p>\n<p>Cube the raw or pre-cooked <strong>potatoes.<\/strong><\/p>\n<p><strong>Preferred Fry:<\/strong><\/p>\n<p>Heat 1 TBS of butter over medium high heat in a skillet. When the butter stops bubbling, add the TBS of oil and swirl.<\/p>\n<p><strong>Raw braised potatoes \ud83d\ude0a: <\/strong>Add the <strong>potatoes<\/strong> and the <strong>onions<\/strong> (optional) to the pan, stir to coat with the <strong>oil<\/strong> and add \u00bd-1 cup <strong>water.<\/strong> Cover and cook for 10 minutes or until <strong>water<\/strong> is gone. Remove cover, increase heat to medium and cook for 10 to 20 minutes, flipping occasionally until nicely browned.<\/p>\n<p><strong>Alternates:<\/strong><\/p>\n<p><strong>Pre-cooked potatoes: <\/strong>Add the <strong>onions<\/strong> (optional) to the pan and cook over medium heat for 5 minutes, stirring occasionally. Add the <strong>potatoes<\/strong> and stirring once or twice, cook 3 to 7 minutes, depending on the cube sizes.<\/p>\n<p><strong>Raw potatoes: <\/strong>Add the <strong>potatoes<\/strong> and the <strong>onions<\/strong> (optional) to the pan, stir to coat with the <strong>oil<\/strong> and cook for 5 minutes, stirring occasionally. Cover, reduce heat to medium and cook for 10 to 20 minutes, depending on the cube sizes.
