{"id":54487,"date":"2024-10-18T16:10:20","date_gmt":"2024-10-18T16:10:20","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=54487"},"modified":"2024-10-18T16:14:53","modified_gmt":"2024-10-18T16:14:53","slug":"honey-garlic-chicken-cutlets","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2024\/10\/18\/honey-garlic-chicken-cutlets\/","title":{"rendered":"Honey Garlic Chicken Cutlets"},"content":{"rendered":"<h3 style=\"text-align: center;\">with Mashed Potatoes &amp; Peas<\/h3>\n<h4 style=\"text-align: center;\">Yield: 2 Servings<\/h4>\n<h6 style=\"text-align: center;\">Adapted from: Dinnerly<\/h6>\n<p>A simple, yet delightful saut\u00e9ed chicken with a honey garlic sauce, served with mashed potatoes and buttered green peas.<\/p>\n<p>Prep: 10, Cook: 20<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz potatoes<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz chicken cutlets <\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz green peas<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp garlic powder<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS honey<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp apple cider vinegar<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">cooking oil<\/span><\/li>\n<\/ul>\n<p><strong>Boil potatoes:<\/strong><\/p>\n<p>Scrub <strong>potatoes<\/strong> (peel, if desired), then cut into 1-inch pieces; place in a medium saucepan with enough <strong>salted water<\/strong> to cover by 1 inch. Cover and bring to a boil over high heat. Uncover and cook until easily pierced with a fork, 8\u201312 minutes. Reserve \u2153 cup <strong>cooking water<\/strong>, then drain and return <strong>potatoes<\/strong> to saucepan. Cover to keep warm off heat.<\/p>\n<p><strong>Cook chicken:<\/strong><\/p>\n<p>Pat <strong>chicken<\/strong> dry; pound to an even \u00bd-inch thickness, if desired. Season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong> Heat 1 tablespoon <strong>oil<\/strong> in a medium skillet over medium-high. Working in batches, if necessary, cook <strong>chicken<\/strong> until browned and cooked through, 3\u20135 minutes per side. Transfer to a plate.<\/p>\n<p><strong>Make pan sauce:<\/strong><\/p>\n<p>Return skillet to medium heat. Add \u00bc cup <strong>water;<\/strong> bring to a simmer, scraping up any browned bits. Stir in all the <strong>honey,<\/strong> \u00bd teaspoon <strong>granulated garlic,<\/strong> and \u00bd teaspoon <strong>vinegar;<\/strong> cook until sauce is thickened, 2 minutes. Off heat, melt in 1 tablespoon <strong>butter.<\/strong> Season to taste. Return <strong>chicken<\/strong> to skillet; turn to coat in sauce.<\/p>\n<p><strong>Microwave peas:<\/strong><\/p>\n<p>In a medium microwave-safe bowl, add <strong>peas<\/strong> and 1 tablespoon <strong>butter:<\/strong> season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Microwave on high until <strong>butter<\/strong> is melted and <strong>peas<\/strong> are warmed through and glossy, 2\u20133 minutes. Gently toss to combine and season to taste with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Mash potatoes &amp; serve:<\/strong><\/p>\n<p>Use a potato masher or fork to mash <strong>potatoes<\/strong> in saucepan. Stir in 2 tablespoons <strong>butter<\/strong> and reserved <strong>cooking water<\/strong>. Season to taste with <strong>salt<\/strong> and <strong>pepper.<\/strong> Serve <strong>chicken cutlets<\/strong> over <strong>mashed potatoes<\/strong> with <strong>peas<\/strong> alongside. Spoon <strong>honey-garlic<\/strong> sauce over top.
