Add the <strong>beans<\/strong> and cover the pot. Continue cooking the <strong>beans,<\/strong> covered, for 3 to 5 minutes until tender but firm. Drain and plunge into <strong>ice water.<\/strong><\/p>\n<p>At serving time, heat the <strong>butter<\/strong> in a skillet, add the <strong>shallots<\/strong> and saut\u00e9 for about 1 minute, until the <strong>shallots<\/strong> start to brown.<\/p>\n<p>Add the <strong>beans, salt<\/strong> and <strong>pepper,<\/strong> and saut\u00e9 briefly.
