Trim <strong>mushroom<\/strong> stems; thinly slice <strong>caps.<\/strong> Halve <strong>onion;<\/strong> thinly slice. Thinly slice <strong>chives.<\/strong> Finely grate <strong>Parmesan,<\/strong> if necessary. Heat 1 tablespoon <strong>butter<\/strong> in a medium skillet over medium-high. Add <strong>mushrooms;<\/strong> season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Cook, stirring occasionally, until golden-brown, 4\u20135 minutes. Transfer to a plate.<\/p>\n<p><strong>Start caramelized onions:<\/strong><\/p>\n<p>In same skillet, melt 1 tablespoon <strong>butter<\/strong> and 1 teaspoon <strong>sugar;<\/strong> cook, stirring frequently, until <strong>sugar<\/strong> is light brown, 1\u20132 minutes. Add <strong>onions<\/strong> and \u215b teaspoon <strong>baking soda,<\/strong> season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Cook, stirring occasionally, until <strong>onions<\/strong> are lightly browned and softened, 5\u20137 minutes.<\/p>\n<p><strong>Finish caramelized onions:<\/strong><\/p>\n<p>To skillet with <strong>onions,<\/strong> add 1 tablespoon <strong>water;<\/strong> cook, stirring frequently and scraping up any browned bits from bottom of skillet. Continue adding 1 tablespoon <strong>water<\/strong> at a time and scraping skillet until <strong>onions<\/strong> are deeply browned and completely soft, another 4\u20135 minutes.<\/p>\n<p><strong>Cook ravioli:<\/strong><\/p>\n<p>Add <strong>ravioli<\/strong> to saucepan with boiling <strong>water<\/strong> (if stuck together, gently pull apart only if possible, without tearing). Reduce heat and simmer gently, stirring occasionally, until al dente, 3\u20134 minutes. Reserve 1 cup cooking water, then drain. To skillet with <strong>onions,<\/strong> add <strong>ravioli, mushrooms,<\/strong> \u00bd cup of the <strong>cooking<\/strong>\u00a0water, <strong>broth concentrate,<\/strong> and 1 tablespoon <strong>butter.<\/strong><\/p>\n<p><strong>Finish &amp; serve:<\/strong><\/p>\n<p>Cook <strong>ravioli, onions,<\/strong> and <strong>mushrooms<\/strong> over high heat, tossing to coat, until <strong>glazed<\/strong> and <strong>saucy,<\/strong> 1\u20132 minutes. Remove from heat and add half of the <strong>Parmesan;<\/strong> stir well until melted and <strong>sauce<\/strong> is silky. Loosen <strong>sauce<\/strong> with more <strong>cooking water,<\/strong> if necessary. Serve <strong>short rib ravioli<\/strong> sprinkled with <strong>chives<\/strong> and more <strong>Parmesan,<\/strong> if desired.
