{"id":54505,"date":"2024-10-18T16:59:03","date_gmt":"2024-10-18T16:59:03","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=54505"},"modified":"2024-10-18T17:10:15","modified_gmt":"2024-10-18T17:10:15","slug":"creamy-cajun-shrimp","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2024\/10\/18\/creamy-cajun-shrimp\/","title":{"rendered":"Creamy Cajun Shrimp"},"content":{"rendered":"<h3 style=\"text-align: center;\">and Buttery Grits<\/h3>\n<h4 style=\"text-align: center;\">Yield: 2<\/h4>\n<h6 style=\"text-align: center;\">Adapted from: Dinnerly<\/h6>\n<p>Two New Orleans favorites\u2014Cajun shrimp and creamy grits.<\/p>\n<p>Note: This needs a side of broccoli.<\/p>\n<ul>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">oz grits<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">scallions<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz roasted red peppers<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz shrimp<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp <strong><span style=\"color: #ff0000;\">Cajun seasoning<\/span><\/strong><\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS cream cheese<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp garlic<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nCook grits:<\/strong><\/p>\n<p>In a small saucepan, combine 2 cups <strong>water<\/strong> and a pinch of <strong>salt.<\/strong> Cover and bring to a boil over high. Whisk in <strong>grits<\/strong> and reduce heat to low; cook, uncovered, whisking occasionally to prevent sticking, until grains are tender, about 7 minutes. Remove from heat and keep covered<\/p>\n<p><strong>Prep ingredients:<\/strong><\/p>\n<p>While <strong>grits<\/strong> cook, finely chop 1 teaspoon <strong>garlic.<\/strong> Trim ends from <strong>scallions,<\/strong> then thinly slice. Coarsely chop <strong>roasted red peppers<\/strong>. Rinse and pat <strong>shrimp<\/strong> very dry, then season all over with \u00bd teaspoon <strong><span style=\"color: #ff0000;\">Cajun seasoning<\/span> <\/strong>(or less depending on heat preference).<\/p>\n<p><strong>Sear shrimp:<\/strong><\/p>\n<p>Heat 1 tablespoon <strong>oil<\/strong> in a medium skillet over medium-high. Add <strong>shrimp<\/strong> and cook, flipping once, until curled and almost cooked through, about 2 minutes. Add chopped <strong>garlic<\/strong> and half of the sliced <strong>scallions;<\/strong> cook, stirring, until fragrant, about 30 seconds.<\/p>\n<p><strong>Finish shrimp in sauce:<\/strong><\/p>\n<p>To skillet with <strong>shrimp,<\/strong> add <strong>cream cheese,<\/strong> chopped <strong>red peppers,<\/strong> and \u2153 cup <strong>water.<\/strong> Cook, stirring, until <strong>cream cheese<\/strong> is melted, <strong>sauce<\/strong> is slightly thickened, and <strong>shrimp<\/strong> are cooked through, 1\u20132 minutes. Season to taste with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Finish &amp; serve:<\/strong><\/p>\n<p>Return saucepan with <strong>grits<\/strong> to medium heat and whisk in 2 tablespoons <strong>butter<\/strong> until melted, about 1 minute.
