Served with jasmine rice with a side of buttery, tender-crisp green beans.<br \/>\nPrep: 10 Cook:<\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz green beans <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">scallions<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS soy sauce<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz broccoli <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">mandarin oranges (or 1 4-oz can)<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz chopped chicken breast<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS apricot jam <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">oz <span style=\"color: #ff0000;\"><strong>sweet Thai chili sauce<\/strong><\/span><\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pkg microwavable rice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS sesame seeds<\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">tsp rice wine vinegar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS cornstarch<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">cooking oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">butter<\/span><\/li>\n<\/ul>\n<p><strong>Prep:<\/strong><\/p>\n<p>Wash and dry produce.<\/p>\n<p>Trim <strong>green beans<\/strong> if necessary. Cut <strong>broccoli<\/strong> into bite-size pieces if necessary. Halve <strong>oranges.<\/strong> Trim and thinly slice <strong>scallions,<\/strong> separating <strong>whites<\/strong> from <strong>greens.<\/strong><\/p>\n<p>Place <strong>green beans<\/strong> and 1 TBS <strong>butter<\/strong> in a medium microwave-safe bowl, cover with plastic wrap and microwave until tender, 2- to 3-minutes (continue to microwave in 30-second intervals if needed). Season with <strong>salt<\/strong> and <strong>pepper,<\/strong> toss to combine.<\/p>\n<p><strong>Cook:<\/strong><\/p>\n<p>Open the package of <strong>chicken<\/strong> and drain off any excess liquid.<\/p>\n<p>Add a large drizzle of <strong>oil<\/strong> to a hot large pan. Add <strong>chicken, broccoli, salt<\/strong> and <strong>pepper,<\/strong> cook, stirring occasionally, until <strong>chicken<\/strong> is cooked through, and <strong>broccoli<\/strong> is tender, 5- to 7-minutes.<\/p>\n<p><strong>Mix:<\/strong><\/p>\n<p>Meanwhile, in a small bowl, whisk <strong>jam,<\/strong> <span style=\"color: #ff0000;\"><strong>chili sauce<\/strong><\/span>, half the <strong>soy sauce,<\/strong> half the <strong>cornstarch,<\/strong> 1 tsp <strong>vinegar,<\/strong> and <strong>juice<\/strong> from <strong>orange<\/strong> halves.<\/p>\n<p>To pan with <strong>chicken<\/strong> and <strong>broccoli,<\/strong> add <strong>orange-soy<\/strong> mixture and <strong>scallion whites<\/strong>, cook, stirring, until <strong>sauce<\/strong> has thickened, and everything is coated, 1- to 2-minutes. Taste and season with <strong>salt<\/strong> and <strong>pepper<\/strong> if desired.<\/p>\n<p><strong>Serve:<\/strong><\/p>\n<p>While <strong>sauce<\/strong> cooks, massage <strong>rice<\/strong> in package, snip to partially open. Microwave until tender, 90 seconds.
