Fresh chives speckle the creamy mashed potatoes on the side, balancing irresistible flavors for this easy breezy meal.<\/p>\n<p><strong>Note:<\/strong> Baked chicken for 15 minutes. <strong>Initial bake of 12 <\/strong>would be better!<br \/>\nPrep: 10 Cook: 40<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS peach jam<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz chicken cutlets<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp smoked paprika<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS McCormick grill mates brown sugar bourbon seasoning<\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">tsp rice wine vinegar<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz potatoes <\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz carrots<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">oz chives <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS cr\u00e8me fra\u00eeche or sour cream<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">cooking oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">butter<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nMix glaze &amp; marinate chicken: <\/strong><\/p>\n<p>Adjust rack to top position and preheat oven to 425\u00b0F.<\/p>\n<p>In a large bowl, whisk together 2 TBS <strong>peach jam,<\/strong> 1 TBS <strong>McCormick Grill Mates Brown Sugar Bourbon Seasoning,<\/strong> 2 tsp <strong>vinegar,<\/strong> and 1 tsp <strong>oil.<\/strong> Transfer half the <strong>peachy glaze<\/strong> to a small bowl (you\u2019ll use it in Step 4).<\/p>\n<p>Pat <strong>chicken<\/strong> dry with paper towels and season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong> Add to large bowl with remaining <strong>peachy glaze,<\/strong> turn until evenly coated. Cover with plastic wrap and set aside to marinate (no need to refrigerate!), 10-15 minutes.<\/p>\n<p><strong>Prep &amp; cook potatoes: <\/strong><\/p>\n<p>Meanwhile, wash and dry produce. Dice <strong>potatoes<\/strong> into \u00bd-inch pieces.<\/p>\n<p>Place <strong>potatoes<\/strong> in a medium pot with enough <strong>salted water<\/strong> to cover by 2 inches. Bring to a boil and cook until tender, 15-20 minutes.<\/p>\n<p><strong>Tip: <\/strong>Cover pot with a lid to bring <strong>water<\/strong> to a boil more quickly.<\/p>\n<p>Reserve \u00bd cup <strong>potato cooking liquid<\/strong>, then drain <strong>potatoes<\/strong> and return to pot.<\/p>\n<p>Mash until smooth and creamy, adding splashes of reserved <strong>potato cooking liquid<\/strong> as needed. Taste and season with <strong>salt<\/strong> and <strong>pepper.<\/strong> (You\u2019ll finish the potatoes in Step 5.)<\/p>\n<p><strong>Roast carrots &amp; chicken: <\/strong><\/p>\n<p>While <strong>potatoes<\/strong> cook, trim, peel, and halve <strong>carrots<\/strong> lengthwise, slice on a diagonal into \u00bc-inch-thick pieces.<\/p>\n<p>Toss <strong>carrots<\/strong> on one side of a lightly <strong>oiled<\/strong> baking sheet with a drizzle of <strong>oil,<\/strong> \u00bd tsp <strong>paprika, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Transfer <strong>chicken<\/strong> from marinade to empty side of baking sheet (discard any marinade left in the bowl). Roast on top rack until <strong>chicken<\/strong> is cooked through (160\u00b0F) and <strong>carrots<\/strong> are browned and tender, <strong>12<\/strong>-17 minutes.<\/p>\n<p><strong>Glaze chicken: <\/strong><\/p>\n<p>Once <strong>chicken<\/strong> is cooked through, carefully remove sheet from oven. Brush tops of <strong>chicken<\/strong> with reserved <strong>peachy glaze<\/strong>.<\/p>\n<p>Return to top rack and bake until <strong>glaze<\/strong> is tacky, 3 minutes <strong>-OR-<\/strong> Torch <strong>glaze<\/strong> until tacky.<\/p>\n<p>Transfer chicken to a cutting board.<\/p>\n<p><strong>Finish potatoes: <\/strong><\/p>\n<p>While <strong>chicken<\/strong> roasts, thinly slice <strong>chives.<\/strong><\/p>\n<p>Return pot with <strong>mashed potatoes<\/strong> to medium heat and cook, stirring occasionally, until warmed through.<\/p>\n<p>Add <strong>chives,<\/strong> 2 TBS <strong>cr\u00e8me fra\u00eeche <\/strong>or<strong> sour cream,<\/strong>\u00a0and 1 TBS <strong>butter.<\/strong> Cook, stirring, until <strong>butter<\/strong> has melted, taste and season with <strong>salt<\/strong> and <strong>pepper<\/strong> if desired.<\/p>\n<p><strong>Finish &amp; serve: <\/strong><\/p>\n<p>Slice <strong>chicken<\/strong> crosswise.<\/p>\n<p>Divide <strong>chicken, mashed potatoes,<\/strong> and <strong>carrots<\/strong> between plates in separate sections.
