Each bite brings a touch of tang from the apricot pan sauce and warmth from one of our favorite spice blends, garam masala.<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz carrots<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">oz garam masala<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">oz fresh cilantro<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">oz apricot preserves<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">oz chicken broth concentrate<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz pork tenderloin<\/span><\/li>\n<li><span class=\"id-ingredient-name\">garlic<\/span><\/li>\n<li><span class=\"id-ingredient-name\">kosher salt &amp; ground pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">olive oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">white wine vinegar (or apple cider vinegar)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">butter<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep carrots &amp; sear pork:<\/strong><\/p>\n<p>Preheat oven to 450\u00b0F with a rack in the center. Trim ends from <strong>carrots,<\/strong> then quarter lengthwise. Pat <strong>pork<\/strong> dry, then season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong> Heat \u00bd TBS <strong>oil<\/strong> in a medium skillet over medium-high. Add <strong>pork<\/strong> and cook, turning, until golden-brown all over, about 6 minutes. Remove from heat and set aside until step 3.<\/p>\n<p><strong>Roast carrots:<\/strong><\/p>\n<p>While <strong>pork<\/strong> cooks, on a rimmed baking sheet, toss <strong>carrots<\/strong> with 1 tsp <strong>garam masala,<\/strong> 1\u00bd TBS <strong>oil,<\/strong> and a pinch each of <strong>salt<\/strong> and <strong>pepper.<\/strong> Roast on center oven rack until tender, tossing halfway through, about 20 minutes.<\/p>\n<p><strong>Roast pork:<\/strong><\/p>\n<p>Once <strong>carrots<\/strong> are halfway done roasting, transfer seared <strong>pork<\/strong> from skillet to same baking sheet. Continue to roast on center oven rack until <strong>pork<\/strong> is firm to the touch with an internal temperature of 145\u00b0F, 6\u201310 minutes. Transfer <strong>pork<\/strong> to a cutting board to rest. Set baking sheet with <strong>carrots<\/strong> aside until ready to serve.<\/p>\n<p><strong>Cook apricot pan sauce:<\/strong><\/p>\n<p>While <strong>pork<\/strong> and <strong>carrots<\/strong> finish cooking, coarsely chop <strong>cilantro leaves<\/strong> and <strong>stems.<\/strong> In same skillet, stir to combine <strong>apricot preserves, broth concentrate,<\/strong> 1\u00bd tsp <strong>vinegar,<\/strong> and \u00bd cup <strong>water,<\/strong> bring to a rapid simmer over medium-high, scraping up any browned bits from the bottom of skillet, and cook until <strong>sauce<\/strong> is reduced to about \u00bc cup, about 3 minutes.<\/p>\n<p><strong>Finish &amp; serve:<\/strong><\/p>\n<p>To skillet with <strong>apricot sauce,<\/strong> add 2 TBS <strong>butter<\/strong> and any resting <strong>pork juices,<\/strong> swirl until <strong>butter<\/strong> is melted. Stir in half of the <strong>cilantro,<\/strong> season to taste with <strong>salt<\/strong> and <strong>pepper.<\/strong> Thinly slice <strong>pork,<\/strong> if desired. Serve roasted <strong>pork<\/strong> with <strong>spiced carrots<\/strong> alongside. Spoon <strong>apricot pan sauce<\/strong> over top and garnish with remaining <strong>cilantro.<\/strong> Enjoy!<\/p>\n<p>Soak up all that <strong>sauce<\/strong> with a quick <strong>rice<\/strong> p<strong>i<\/strong>laf!
