Wash and dry all produce.<\/p>\n<p>Trim and thinly slice <strong>scallions,<\/strong> separating <strong>whites<\/strong> from <strong>greens.<\/strong> Trim <strong>green beans<\/strong> if necessary.<\/p>\n<p>In a small bowl, combine <strong>panko, garlic powder,<\/strong> a drizzle of <strong>oil, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>In a separate small bowl, combine <strong>ponzu,<\/strong> <span style=\"color: #ff0000;\"><strong>chili sauce<\/strong><\/span>, and half the <strong>mayonnaise<\/strong> (you\u2019ll use the rest later).<\/p>\n<p><strong>Cook rice: <\/strong><\/p>\n<p>Melt 1 TBS <strong>butter<\/strong> in a small pot over medium-high heat. Add <strong>scallion whites,<\/strong> cook until slightly softened, 1 minute.<\/p>\n<p>Stir in <strong>rice,<\/strong> \u00be cup <strong>water,<\/strong> and a big pinch of <strong>salt.<\/strong> Bring to a boil, then cover and reduce to a low simmer. Cook until <strong>rice<\/strong> is tender, 15-18 minutes.<\/p>\n<p>Keep covered off heat until ready to serve.<\/p>\n<p><strong>Roast chicken &amp; green beans: <\/strong><\/p>\n<p>While <strong>rice<\/strong> cooks, pat <strong>chicken<\/strong> dry with paper towels, season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Place <strong>chicken<\/strong> on one side of a baking sheet. Spread remaining <strong>mayonnaise<\/strong> onto tops of <strong>chicken,<\/strong> then mound with <strong>panko mixture,<\/strong> pressing firmly to adhere (no need to coat the undersides).<\/p>\n<p>Toss <strong>green beans<\/strong> on empty side of same sheet with a drizzle of <strong>oil, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Roast on top rack until <strong>chicken<\/strong> is browned and cooked through and <strong>green beans<\/strong> are tender, 15-18 minutes.<\/p>\n<p><strong>Tip: <\/strong>If <strong>green beans<\/strong> finish first, remove from sheet and continue roasting <strong>chicken.<\/strong><\/p>\n<p><strong>Finish &amp; serve: <\/strong><\/p>\n<p>Fluff <strong>rice<\/strong> with a fork, season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Divide <strong>rice, green beans,<\/strong> and <strong>chicken<\/strong> between plates.
