And the best part: You can make it in under half an hour. All it takes is a pressure cooker and some dumping skills.<br \/>Adding all the ingredients to the pressure cooker with no added liquid makes for an intensely flavored stew that cooks in its own juices.<br \/>Fish sauce adds umami depth to the fish once it&#8217;s cooked.<\/p>\n<ul>\n<li><span class=\"ingredient-name\">lb bone-in skin-on chicken thighs and drumsticks<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">lb tomatillos, quartered, husks discarded (about 4 tomatillos)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb <span style=\"color: #ff0000;\"><strong>poblano peppers<\/strong><\/span>, roughly chopped, seeds and stems discarded (about 3 peppers)<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz <span style=\"color: #ff0000;\"><strong>Anaheim or Cubanelle peppers<\/strong><\/span>, roughly chopped, seeds and stems discarded (about 2 peppers)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\"><strong><span style=\"color: #ff0000;\">Serrano<\/span><\/strong> or <strong><span style=\"color: #ff0000;\">jalape\u00f1o chilies<\/span><\/strong>, roughly chopped, stems discarded<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz white onion, roughly chopped (about 1 medium)<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">medium cloves garlic, peeled<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS whole cumin seed, toasted and ground<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup loosely packed fresh cilantro leaves and fine stems, plus more for garnish<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS Asian fish sauce<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Fresh corn tortillas and lime wedges, for serving<\/span><\/li>\n<\/ul>\n<p>In a 6-qt Instant Pot, combine <strong>chicken, tomatillos, <span style=\"color: #ff0000;\">poblano peppers, Anaheim peppers, Serrano peppers<\/span>, onion, garlic, cumin,<\/strong> and a big pinch of <strong>salt.<\/strong> Set Instant Pot to the <strong>SAUT\u00c9 HIGH <\/strong>setting. Add <strong>oil<\/strong> and heat until shimmering. Seal Instant Pot and set to <strong>MANUAL HIGH<\/strong> pressure for 15 minutes. Quick release pressure.<\/p>\n<p>Using tongs, transfer <strong>chicken<\/strong> pieces to a bowl and set aside. Add <strong>cilantro<\/strong> and <strong>fish sauce<\/strong> to the remaining contents of IP. Blend with a hand blender or in a standing blender and season to taste with <strong>salt.<\/strong> Return <strong>chicken<\/strong> to <strong>sauce,<\/strong> discarding skin and bones and shredding if desired.
